Favorite sauteed summer vegetable dish

A long-time favorite for us.  Recipe was found printed inside a Land O Lakes butter carton years ago.

 

ITALIAN GARDEN SAUTE

 

4-6 SERVINGS.  Customize ingredients to your taste

 

 

--1/4 cup sweet cream butter

--2 cups (2 medium) thin-sliced zucchini (I also add      yellow squash.  Broccoli and/or carrots  can work, too.)

--1 cup whole kernel corn, or 7-oz. can of corn,   

   drained

--3/4 cup (1 small) green pepper strips

--1/2 cup chopped onion

--1 tsp. sugar

--1/2 teaspoon each of salt, garlic powder, basil leaves, oregano leaves

--1/8 teaspooon pepper

--1 cup (2 small) coarsely chopped tomatoes

 

In heavy 10-inch skillet, melt butter.

 

Add squash, corn, pepper, onion, and seasonings.

 

Saute over medium heat, stirring frequently until vegetables are tender and extra liquid has evaporated (8-10 minutes)

 

Gently stir in tomatoes.

 

Continue cooking just until hot yet firm (2-3 minutes).

Serve immediately.

Delicious!  I bake these instead of pan sauteing them.  Been a favorite for a long time.  I have to omit the corn, but enjoy it just the same!

Use red onion and it really adds to the colors!

Yes, red onion can be a very colorful addition to a meal.

 

A combo of green, red, yellow pepper strips adds even more color.

 

The tomatoes in this recipe add much to color, too.

 

But the key to the recipe (in my opinion) is the flavor gained from the seasoning mixture. 

 

I wouldn't mess with the proportions of herbs, plus the little amount of sugar--and even using butter instead of oil makes a big difference in taste.

This recipe looks wonderful! Thanks for posting. I agree that the seasonings, including the butter, sound perfect. I'm going to a local produce "farm" on Friday and plan to get the fresh veggies.
