This my standby basic:
Crust:
3 cups graham cracker crumbs (I grind in food processor)
2 tbsp sugar
1/2 cup melted butter
Mix all ingredients until moistened. Press into bottom and 1" up sides of greased (I use cooking spray) springform pan. Store in refrigerator.
Filling:
16 oz room temperature cream cheese
1 cup sugar
3 eggs
1 tsp vanilla
1 tbsp lemon zest
1 cup sour cream
Beat cream cheese on low speed with electric mixer until smooth. Gradually beat in sugar until creamy. Beat in eggs one at a time. Stir in vanilla and lemon zest. Mix in sour cream. Pour into crust and evenly smooth the top.
Bake in 325 degree oven for 50-55 minutes. Cake is done when it still has a slight jiggle. Run butter knife around edges of cake to loosen sides. Cool in pan for 1/2 hour. Loosely cover with plastic wrap and chill in fridge for at least 5 hours (I leave mine overnight). Remove sides of pan and place on serving plate.

I don't know, it has always been eaten within a couple days at my house.

@house_cat Cheesecake actually gets tastier if refrigerated for a few days. I always make mine several days before and even at times freeze it.

I have recipes for a lot of cheesecakes...one of my favorite desserts. This is my favorite to make and eat. It is naturally gluten free, so it's good to take to pot lucks. I make these often and always get asked for the recipe.
Cheese Cup Cakes
Three 8 oz packages or cream cheese
1 cup sugar
5 eggs
1 tea. Vanilla
Mix well with mixer and divide evenly into 24 cup cake papers in cup cake pans.
Bake at 350 for 25 minutes.
Remove cup cakes and turn oven off, spoon on topping. Then place back in cold oven with door closed ( oven will be warm) for 10 minutes.
Topping
1 cup sour cream
1/4 cup sugar
1 tea. Vanilla
You can add fruit toppings when cool, if you wish, but don't have to. Refrigerate to store.

A couple of questions -
Do they stick to the papers?
Could I prepare little rounds of graham crust and drop them into the cups before filling them?

@house_cat They stick to the papers like a regular cupcake batter would. You serve them in the papers.
The recipe does not call for a crust, so I do not use one.
I dropped a Nilla Wafer in the cupcake paper first for somone who wanted a crust on the bottom, but only did this once as a special request. I guess you could use graham crackers if you wanted too.
When I make them, they disappear fast. I am bringing them to Easter dinner this year topped with a little bit of cherry preserves.
