Looks beautiful!  

I found a rouge head of purple cabbage in my crisper recently. 

Seriously...it’s been there so long, I don’t remember buying it (!),

but I cut it opened...and it was perfect. I steamed it, but soup

sounds good.  I might have to get the fixins’ to make some soup

this weekend.  

 

Do you ever cook with leeks or fennel?

     No completely forgot about them. Lol Now that you reminded me definitely adding to the pot. By the way!! Love throwing in all sorts of beans and potatoes.

I've never made a soup and left the chunks of veggies this large.  Beautiful presentation!

 

I usually cut my veggies bite size.  Gonna have to try this.  I love cabbage also, boiled, steamed or fried.  Love unstuffed cabbage and colcannon.

 

I make a minestrone with leeks and it has a great flavor but I have never eaten or cooked fennel.

      Did the same until discovered  "Inn of The Seventh Ray" Try it sometime. Fun! Nothing is written in stone. Experiment with shapes and sizes. In my opinion most important using fresh ingredients. Thanks for sharing.

Just googled, "Inn of the Seventh Ray."  OMG, I'd copy anything they did too!  Amazing place!

I had the pleasure on more than one occasion dining there. Lived in CA. That is what I miss the most. Eclectic venues and hideaway spots.

@Sweet_Serenity....girl after my heart.  I've got an "everything" pot brewing frequently on the stove....Your cabbage pot could be a cousin to my everything soup.  Today's ingredients:  cabbage, onions, kale, baby spinach, garlic, carrots, celery, tomatoes, italian parsley, zuchinni, yellow squash,  cannelini beans, gold potatoes rolling in a pot of low sodium veggie broth and filtered water.  Daily it just depends on what is on hand, but this is pretty typical.  So my veggie sister, here's a toast to our ever present health and delicious cabbage soup!
