Another from the Farmer's Almanac compilation book. There is an optional frosting which I didn't use, I just dusted with powdered sugar and it is very good and moist!

Farmer's Apple-Walnut Cake

3/4 cup butter

1 1/2 cups sugar

2 eggs

1 cup plain yogurt (I used sour cream)

2 cups flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

2 large, tart apples, peeled and grated (I used granny smith)

3/4 cup finely chopped walnuts

Preheat oven to 350F. Butter an 8" Bundt pan well. Cream butter and sugar in large mixing bowl. Beat in eggs. Add yogurt and beat until smooth. In small bowl, combine dry ingredients (flour - nutmeg). Add to butter mixture, combining thoroughly, but not beating. Stir in apples and nuts. Spoon batter into pan and bake 50-60 minutes until done. Cool in pan for 10 minutes and unmold onto rack to continue cooling. Dust with powdered sugar or frost when cool.

Cream Cheese Frosting

3 oz. cream cheese, softened

1/4 cup butter, softenend

1 1/2 cups powdered sugar, sifted

Combine cream cheese and butter and beat until smooth. Add sugar, beating at low speed until blended.
