Easy Tuscan Bean Soup - 30 Minute Monday recipe! Loaded with veggies and SO easy to put together.

Fall Tuscan Soup

Yummy! Quite honestly one of my favorite soups. This is so warm and comforting. It's the perfect combination of ingredients. I made a huge pot of this last night and I'm off the take comfort in a bowl right now. If you try it, I hope you'll love it.


2 tablespoons extra virgin olive oil
1 medium yellow onion, diced
2 medium carrots, diced
2 stalks celery, diced
1 medium zucchini, diced
1 yellow summer squash, diced
4 cloves garlic, pressed
1/4 teaspoon red pepper flakes
1/4 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 quart vegetable (or chicken) broth
2 (14 ounce) cans cannellini beans, drained and rinsed
1 (14 ounce) can no-salt-added diced tomatoes with juices
3 cups chopped kale, ribs removed
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/2 tablespoon white sugar
1 tablespoon white wine vinegar

Heat 2 tablespoons of olive oil in a 6 quart or larger Dutch oven over medium-high heat. Add the onions, carrots, celery, zucchini, and squash. Saute for 4 minutes. Add the garlic, red pepper flakes, thyme and rosemary. Cook 30 seconds.

Stir in the broth, beans, and tomatoes. Bring the contents to a boil, then turn the heat down to low and add the chopped kale. Cover the pot and simmer for 15 minutes. Use an immersion blender* to partially puree the soup, leaving some chunks of beans vegetables for texture. Add the salt, pepper, sugar, and vinegar. Taste and adjust seasonings as needed. Serve topped with Parmesan or Dubliner cheese and a side of crusty bread.

Don't be envious, LoLa! I'm moving soon and need to clear out this pantry of mine. You wanna talk OVERWHELMING? {#emotions_dlg.crying} I happen to be inundated with....canned beans. OMG, there must be over 25 cans of different varieties in there. Thank goodness your recipe will take care of 2 of 'em.

YES, I finally know where I'm going, and will be moving clear across the country. Again. It's the coordinating of it all that's been keeping me awake at night! Movers, junk haulers, car moving companies, plane flights, and what to do ... with the cats. I finally decided to go with a pet courier company who'll come to my house, pick up the kitties and get them both on the plane, which my sis will meet on the other side. It's expensive, but will be soooo helpful.

The next month will be a royal pain, but afterwards, I'll be in a whole new place. Hope all is well with YOU. Smile

ETA: Oh my gosh, LoLa! I made the soup! Deeelicious! I had a few boneless, skinless chicken thighs, so cubed them and added them to the pot. Yummy! Thanks so much.
