I was looking for an easy dessert to transport.  I cut the brownies a little larger than normal so I could put a scoop of peppermint ice cream on top and a drizzle of bittersweet chocolate sauce. 

 

2 sticks of unsalted butter
8 ounces Ghirardelli bittersweet or semisweet chocolate bars roughly chopped or broken in pieces.
4 large eggs
1/2 t salt
1 cup sugar
1 cup dark brown sugar
2 t vanilla extract
1 cup flour

 

Pre heat oven to 350.  Use a 13 x 9 inch pan lined with parchment paper brought up sides so there is an overhang to get brownies out of pan.  Spray parchment paper with nonstick spray.

 

Melt butter in medium bowl in the microwave.  Add chocolate and whisk until completely melted.  Heat again for 20 second if necessary.

 

Whisk eggs in a large bowl.  Add salt, sugar, dark brown sugar and vanilla.  Whisk until smooth.  Whisk in the choc-butter and then add flour.  Whisk again.

 

Pour batter into prepared pan and spread evenly. Bake for about 45 minutes.  Cool completely in pan on a rack.  If making ahead wrap pan in plastic wrap and keep at room temp for one day.

 

Lift brownies out pan using parchment paper and transfer to cutting board.  Trim away the edges and cut into 2 inch squares.  

 

I cut them larger as a base for the peppermint ice cream.  Recipe says they can be frozen for 3 months.

This recipe sounds yummy and I can’t wait to try it.  I don’t recall a brownie recipe with brown sugar so thanks for the post.

@DiAnne  Dang, that sounds very good!  The bittersweet sauce, is that an item purchased at the grocery or homemade?

I make it this way:

 

3/4 cup heavy cream

3 tbsps light corn syrup

3 tbsps butter cut into tablespoons

6 oz finely-chopped bittersweet chocolate

 

Bring everything but chocolate to boil over medium heat in small saucepan.  Add chocolate off heat while swirling pan.  Cover and let stand until chocolate is melted.  Gently whisk to combine.

I purchased the bittersweet chocolate sauce.  The brand is Stonewall Kitchen.  It is available at some grocery stores or online.

@DiAnneCan't wait to try this recipe, I bake brownies  quite often.  If you're  interested I purchased the Mega Brownie pan from HSN and absolutely love it, and it makes 24 individual brownies.  The item number is 681-902.

My DH loves chocolate so I top our holiday brownies with Schwans ice cream (chocolate mint or peppermint) and some Hershey syrup.  I generally make a triple chocolate chunk type of brownie mix. What could be easier?

@Mom2DogsJust a little over half full. If you use box brownie mix it takes two boxes to fill the 24 squares.  I spray with pam first and the brownies come right out kinda crispy sides and soft and chewy in the center.  I placed a miniature peanut butter cup in each one before I baked them, boy howdy were they good.  Pan fits a standard oven.
