FRESH CORN SALAD with Grape Tomatoes.... So Good!

Once you taste this corn salad, you'll want to eat the entire bowl of it. It's simple, tasty, very easy to make and goes with just about any meal as a side. Especially nice for the summer months. Fresh Cilantro is delicious in this recipe, but if you're really opposed to cilantro, you could sub Italian flat leaf parsley instead.

4 cups Fresh corn… about 5 large ears (cooked in microwave *see below)

1/4 large red onion diced (or 1/2 a small red onion)

1 ½ cup cherry or grape tomatoes or about ¾ of a pint cut in half

1/4 cup fresh Cilantro leaves, maybe a little more, chopped finely

1/4 cup feta cheese crumbed, I used a tad more (don't omit this, it just the right amount to add that little extra burst of goodness)

3 tablespoons olive oil

2 tablespoons white vinegar

1 tablespoon lime juice

1 teaspoon kosher salt

1/4 teaspoon black pepper

To cook fresh corn, wrap each shucked ear in a damp paper towel and microwave 2 minutes per ear of corn. Run under cold water until cool, and then cut the corn off.
Combine the corn, red onion, tomatoes, cilantro, and feta in a bowl.
In a small bowl whisk together the olive oil, vinegar, lime juice, kosher salt, and black pepper. Pour over the other ingredients. Toss to combine.
Serve immediately. Recipe can be made before, adding the fresh cilantro just before serving. Store any leftovers in an airtight container in the refrigerator for up to four days.

I make a cooked variation of this with basil instead of cilantro and without feta cheese. It's good cool as a leftover, too. Your recipe sounds delicious, too! I'm going to print it for later this week. Thanks!
