Chocolate Peppermint Green Smoothie

 

1 1/2 cups unsweetened coconut or almond milk
1/2 avocado (barely ripe) or 1 banana
2 tablespoons unsweetened cocoa powder
1 tablespoon maple syrup or honey
1Tablespoon finely chopped mint or 1/4 tsp peppermint extract
1 cup baby spinach
1 tablespoon flax seeds or chia seeds
2 cups ice
2 tablespoons whipped cream and fresh mint (optional)


Add the first 7 ingredients (everything except the ice) to a blender container in the order listed. Cover and blend on high for 45 seconds, or until smooth.
Add the ice. Cover and blend on high 15-20 seconds, using the tamper to press the ice down into the blades.
Pour into two glasses. Top with whipped cream and garnish with extra mint, if desired. Serve immediately.

Sassy7356...........just wanted to say here that I tried your Hawaiian Kielbasa Recipe today.....very good!!!  I have never fixed kielbasa but will keep this recipe on hand....so nice for a change.  Next new recipe to try is the Taco Soup.

 

Moving along for more great recipes....thanks everyone for sharing....takes me awhile but like to try your new recipes!

Chicken with Vegetables.....originally found on Pinterest ...good!

 

3 or 4 chicken breasts

6-8 small red potatoes, quartered

fresh green beans, ends trimmed

1 pkg. dry Italian Dressing Mix

OLIVE OIL

 

In a 9 X 13" baking dish, place chicken breasts in center.  Place potatoes and green beans around chicken. Drizzle OLIVE OIL over all.  Sprinkle Italian Dressing Mix on top (don't have to use whole pkg.). Cover and bake at 350 degrees for 1 hour.

Banana Bread

 

3 medium ripe bananas (1 cup mashed)

1/2 cup butter

1 cup sugar

2 eggs (unbeaten)

1/2 cup nuts, optional

1/2 cup sour cream

1 tsp baking soda

2 cups sifted flour

1/4 tsp salt (pinch)

1 tsp vanilla

 

Cream butter and sugar.

Beat in eggs one at a time.

Mix in dry ingredients which have been sifted together.

Beat in mashed bananas, sour cream and vanilla.

Add nuts

Divide into three greased and floured small loaf pans.

 

Bake at 350 degrees for one hour.

Let stand 10 minutes before removing from pan to cool on wire rack.

 

I have been making this recipe for over 30 years and still make it every one to two weeks.

 

Sometimes 1 cup of chocolate chips is also added.

Mother Bieganeks Jamaican Barbeque Sauce

 

1 1/2 c. Cider Vinegar

4 t. Lemon juice

3 T. Worcestershire Sauce

2 t. Brown sugar

1T. Prepared mustard

1/2 Cup tomato purée 

1 cup ketchup

1 T. Liquid Smoke

1 t. Garlic powder

1 t. Cayenne pepper

Salt

 

Blend ingredients and simmer for 30 minutes.  Refrigerate and use as you see fit.  

Very good on leftover pork.

My kids love this macaroni and cheese.  It's another recipe I got from margaretsmorsels.blogspot.com

 

Macaroni and Cheese
8 Servings

 

1 (8 oz.) pkg. elbow macaroni
2 Tbsp. nonfat dry milk
2 Tbsp. flour
1 Tbsp. butter, melted
1 1/4 cups boiling water
3 cups grated Cheddar cheese, divided
1/4 tsp. salt

 

Cook macaroni according to package directions; drain and set aside. In a large bowl, mix dry milk, flour and butter. Gradually add boiling water, beating constantly. Add 1 1/2 cups cheese and continue beating until smooth and creamy. Stir in macaroni, 1 cup of the remaining cheese and salt. Transfer to a lightly greased 2-quart baking dish. Cover with foil. Bake at 350° for 25 minutes. Remove foil. Sprinkle with remaining 1/2 cup cheese. Continue baking 1 minute or until cheese melts.

I haven't made this for ages.

 

Orange Jello Salad

 

 

2 (3 oz) packages orange flavored Jello

2 cups boiling water

1 pint orange sherbet

1 (10 oz) can mandarin oranges, drained

 

Whisk the Jello into the boiling water until dissolved. Allow to cool for 10 minutes, then stir in the orange sherbet until completely melted. Once the Jello begins to thicken, stir in the drained mandarin oranges. Pour into a Jello mold, and refrigerate until set, about 6 hours.

Kahlua Brownie Parfaits

 

 

INGREDIENTS
1 box favorite brownie mix
canola oil (I use melted butter) 
water
eggs
½ cup Kahlua, coffee liqueur or coffee flavorings instead of liqueur
1-cup crushed toffee (6 1.4-ounce Heath bars) – save ¼ cup
1 (8-ounce) container Cool Whip
2 (3.9 ounce) packages chocolate pudding
2 cups milk
Garnish with raspberries, whipped topping, mint leaf and chocolate-toffee candy pieces

 

INSTRUCTIONS
Preheat oven to 400F. (check package directions for temp)
Prepare brownie mix per package directions then pour into a 9x13-inch baking dish. Cool completely then punch holes in brownies with a fork. Evenly pour Kahlua over the brownies and set the brownies aside.
Prepare pudding per package directions.
Crush chocolate toffee bars into small pieces, reserving ¼ cup for topping. Combine the remaining candy with whipped topping.
Layer crumbled Kahlua-soaked brownies, Cool Whip,  toffee candy mixture and chocolate pudding into serving dishes.

Winter Fruit Salad with Lemon Poppy Seed Dressing

 

Dressing:

1/2 cup sugar

1/3 cup lemon juice

2 teaspoons finely chopped onion

1 teaspoon Dijon mustard

1/2 teaspoon salt

2/3 cup oil

1 Tablespoon poppy seed

 

Salad:

1 large head romaine lettuce, torn into bite-sized pieces

1 cup shredded Swiss cheese

1 cup cashews

1/4 cup sweetened dried cranberries

1 Apple, cubed

1 PEAR, cubed

 

In a blender or food processor, combine sugar, lemon juice, onion, mustard and salt.  Process until blended.  With machine running, add oil in slow steady stream, processing until thick and smooth.  Add poppy seed; process a few seconds to mix.

 

In large serving bowl, combine all salad ingredients; toss to mix.  Pour dressing over salad before serving; toss to coat.
