Raspberry Bread Pudding Recipe

 
1 1/2 loaves aged or day old,  white bread (I like
to use a heavy type of bread, usually 1 lb. loaves
would be standard.)
1 qt. heavy cream
3 C. sugar
1 egg
1 tsp. vanilla
 
5 C. raspberries, fresh or frozen (hers were fresh)
1 C. sugar
1/2 C. apple juice
 
In a large bowl mix the cream, sugar, egg and vanilla. 
Cut bread into 1 1/2 inch cubes and add to cream mixture,
coating the bread well.  Let stand 30 minutes, stirring every
5 minutes to allow cream to absorb.
 
Mix the raspberries, sugar and apple juice, stirring
until sugar is dissolved.
 
Layer a 9x13 inch baking pan 3/4 full with the bread mix
and pour fruit filling over the bread mix, spreading evenly.
Top with the remaining bread.  Bake 40 minutes at 375.
Serve warm topped with vanilla cream sauce.
(If you want it to cut into nice squares you can chill
it and then cut it into squares, then microwave it
for 20-25 seconds per piece and top with sauce.)
 
Vanilla Cream Sauce
1 1/3 C. butter
5 T. flour
3 C. heavy cream
1/2 tsp. salt
2 tsp vanilla
2/3 C. sugar
 
Melt butter in medium saucepan and add flour.  Stir
10 minutes until it has a nutty aroma, do not brown.  Add
salt, cream and sugar until mix is thick.  Remove from heat
and stir in vanilla.  Serve warm over the pudding.

Hawaiian Kielbasa

 

3 pounds Kielbasa, sliced into 2-inch chunks
1 15-1/4 oz. can crushed pineapple
1 18-oz. bottle barbecue sauce
1/2 cup brown sugar, packed
1 tablespoon ground ginger
1 teaspoon onion powder
1 teaspoon garlic powder

 

Combine all in a slow cooker. Mix well.  Cook on Low for about 2 hours, until warmed through, or on High for about 30 minutes.  (Sometimes I do it stovetop, too.)

 

Serve with rice.

This is is another recipe I had for Golden Mushroom Soup.  I think I got it here....thanks to contributor!  Easy and Good!

 

Pork Chops

 

2-4 pork chops (salt and pepper)

Put them in baking dish.

Slice one Sweet ONION and place on top of pork chops.

Pour one can of Golden Mushroom Soup on top of onions.

Cover and bake for 1 hour at 350 degrees.

 

NEXT INGREDIENT ...... FISH (any kind)

This can be doubled which is what I always do.

 

Baked Salmon Patties
4 Servings

 

1 (14 3/4 oz.) can pink salmon, drained, skin and bones removed or 2 (5 oz.) cans skinless, boneless salmon, drained
3/4 cup milk
1 cup fresh bread crumbs
1 egg, beaten
1 tsp. dried minced onion
1/4 tsp. salt
1/8 tsp. pepper

 

Combine all ingredients; mix well. Spoon into 8 greased muffin cups, using 1/4 cup in each. Bake at 350° for 45 minutes or until browned.

@momtochloe Just peeped my head in here to see what was cookin' and OUCH! There are now visions of creamy baked spaghetti and raspberry bread pudding dancing in my head! I am not prepared to participate today but I will be BACK. And I should have known that MTC would be right in the middle of this kitchen scrum. Smiley Happy)

Okay, I have not made this but I thought it looked "interesting"!

 

Chocolate Cheese Fudge

Chocolate Cheese Fudge

Ingredients

1/2 pound Velveeta cheese, sliced
1 cup butter
1 teaspoon pure vanilla extract
1 cup chopped nuts, pecans, walnuts
2 (16-ounce) boxes confectioners' sugar
1/2 cup cocoa powder

Directions

Spray lightly the bottom of a 9 by 2-inch square pan with a nonstick spray.
In a saucepan over medium heat, melt the cheese and butter together, stirring constantly until smooth.

Remove from heat and add the vanilla and nuts.
In a large bowl sift together the sugar and cocoa. Pour the cheese mixture into the sugar and cocoa mixture and stir until completely mixed. The candy will be very stiff.


Using your hands, remove candy from bowl and press evenly and firmly into pan. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil. Place pan in refrigerator until candy is firm.
To serve candy, cut into squares.

Red quinoa and avocado salad

 

Ingredients
1/3 cup red quinoa
2/3 cup water
1 cup cherry tomatoes, halved
1/2 cup diced cucumber
1/4 cup diced red onion

2 tablespoons lime juice
1/2 teaspoon ground cumin seed
salt and pepper to taste
2 cups baby spinach leaves
1 avocado - peeled, pitted and sliced
Directions
Bring the red quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Spread into a mixing bowl, and refrigerate until cold.
Once the quinoa has chilled, gently stir in the tomatoes, cucumber, and onion. Season with lime juice, cumin, salt, and pepper; stir to combine. Divide the spinach leaves onto salad plates, and top with the quinoa salad. Garnish with the avocado slices to serve.

Loaf Cake
12 to 16 Servings

 

1 cup shortening (no substitutes)
2 cups sugar
4 eggs, beaten
3 cups all-purpose flour
1 cup buttermilk or sour milk (no substitutes)*
2 Tbsp. pure vanilla extract
1/4 tsp. baking soda
1 tsp. baking powder

 

Cream shortening and sugar until light and fluffy, about five to seven minutes. Beat eggs and add all at once to creamed mixture; mix well. Add flour and buttermilk alternately, beginning and ending with flour; mix after each addition until just combined. Add vanilla, baking soda and baking powder; mix until combined. Pour batter in a greased and floured Bundt or tube pan. Bake at 325° for 45 to 60 minutes, or until done. Put the pan on a wire rack for 10 minutes; remove the cake and cool completely on the wire rack.

 

*To make 1 cup sour milk, put 1 tablespoon of lemon juice or white vinegar in a measuring cup. Add enough milk to make 1 cup. Thoroughly stir the mixture and let it sit for 5 minutes; proceed as directed.

Tee hee, hello my friend @cody2! . . . good to see you and I cannot recommend that spaghetti casserole more.  It's one of the few dishes that I ate everything (normally I have to toss a portion or more and that just kills me) . . . Smiley Happy
