FEBRUARY RECIPE EXCHANGE GAME

February!  Already!  Where did January go?  

 

.HOW TO PLAY.......
 
The first player of the month starts the game by posting their choice of recipe.  At the end of the text, she or he types, "the next ingredient: xxx."
(The x's represent that person's choice of any ingredient that can be included in a recipe).  

Throughout the game, the next poster in line must use the ingredient that the person ahead chose.  If you can, highlight the ingredient and/or put it in capital letters anywhere that it is used throughout the recipe.  That does make it easier for everyone to see how the game works.
 
Because of time or system delays, some duplicate posts occur to the same ingredient.  The next poster generally responds to the first post for the next ingredient.  Good recipes and lots of fun!!
 
Normally, we start out with a recipe so I will post the last one shared on the January thread and we can take it from there if that's ok with every body.
 
This month is VALENTINE'S DAY.  Many on this BB will not be celebrating in the traditional way!  That is why I posted the opening picture/verse.  Remember, no matter where you are in life, you have a friend who loves you!

8 - can Taco Soup

 

  • 1(15 ounce) can black beans, drained and rinsed
  • 1(15 ounce) can pinto beans, drained and rinsed
  • 1(14 1/2 ounce) can diced tomatoes, drained
  • 1(15 1/4 ounce) can SWEET CORN, drained
  • 1(12 1/2 ounce) can chicken breasts, drained
  • 1(10 3/4 ounce) can cream of chicken soup
  • 1(10 ounce) can green enchilada sauce
  • 1(14 ounce) can chicken broth
  • 1(1 1/4 ounce) packet taco seasoning

Mix all ingredients together in a large pot.

Heat until warm, stirring occasionally.

Serve with tortilla chips.

 

Next ingredient:  Water Chestnuts

Hi Zhills....good to see you here again.  Thanks for starting us off...I like the message!  

 

Crunchy Turkey Casserole

 

2 cans cream of mushroom soup, undiluted

1/2 cup of milk or chicken broth

4 cups cubed cooked turkey

2 celery ribs, thinly sliced

1 small onion, chopped

1 can (8ozs) sliced WATER CHESTNUTS, drained and halved

(now they sell diced water chestnuts I have used)

1 Tablespoon soy sauce

1 cup chow mein noodles

1/2 cup slivered almonds

 

Combine soup and milk; stir in turkey, celery, onion, WATER CHESTNUTS and soy sauce.  Transfer to a greased 2 quart casserole dish.  Sprinkle with chow mein noodles and almonds.

Bake, uncovered, at 350 for 30 minutes or until bubbly and heated through.

Chocolate Chip Bars

 

Mix together until crumbly like pie crust.  Take out 1 cup and set aside.

 

3 C flour

2 C brown sugar

1 C butter

 

Add to remaining crumbs and mix thoroughly:

 

1 egg

1 C milk

1/2 tsp. salt

1 tsp. baking soda

1 tsp. vanilla

 

Pour batter in to a greased 9 x 13 pan.

 

Topping:

Mix the reserved 1 C crumbs, 1 C chocolate chips, 1/2 C nuts (optional).

 

Sprinkle on batter.

 

Bake at 350 degreese for 30 - 35 minutes or until a tootpick comes out clean.  

 

Delicious warm!

Creamy Chicken and Angel Hair Pasta

 

4 Tablespoons butter

1 teaspoon oregano

1 pkg.(7 oz) Dry Italian-Style Salad Dressing Mix

1/2 cup white wine

1 can GOLDEN MUSHROOM SOUP

4 ozs. Cream Cheese with Chives (whipped tub)

4-6 skinless, boneless chicken breast halves*

8 ozs. (or more) angel hair pasta*

 

Preheat oven to 325 degrees.  In large pan, melt butter over low heat; add oregano and dressing mix.  Blend in wine and soup, mixing until combined.  Blend in cream cheese and stir until smooth.  Allow to simmer gently.

 

Arrange chicken breasts in baking dish and pour sauce over.  Bake for 60 minutes, uncovered.  When chicken is almost done, boil pasta and drain well.  Serve chicken with sauce on warm angel hair pasta.

 

* depending on how many you are serving

Basmati Pilaf with Dried Fruits and Almonds

Servings: 4

 

Ingredients:

 

1-1/2 cups basmati rice
3 tablespoons unsalted butter
1/2 cup finely chopped yellow onions, from one small onion
1/2 teaspoon cumin
1/2 teaspoon ground turmeric
1/4 teaspoon cinnamon
2 cloves garlic, minced
2-1/4 cups water
1-1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup dried fruit, such as currants, raisins or finely chopped dried apricots
1/4 cup sliced or slivered almonds, toasted until golden
Instructions


Place rice in medium bowl and add enough water to cover by 2 inches. Using your hands, gently swish grains to release any excess starch. Carefully pour off water, leaving rice in bowl. Repeat four to five times, until water runs almost clear. Using a fine mesh strainer, drain water from rice. Place strainer over bowl and set aside.
Melt butter in a pot over medium-low heat. Add onions and cook, stirring regularly, until softened but not browned, about 4 minutes. Add cumin, turmeric, cinnamon, and garlic to sautéed onions and cook until fragrant, about 30 seconds longer. Add rice to pot, and cook, stirring constantly, for about 3 minutes. Add water, salt and pepper to rice and return to a boil. Reduce heat to low, cover, and simmer until all liquid is absorbed, 15-18 minutes. Off heat, remove lid, and sprinkle dried fruit over rice (do not mix in). Place lid loosely over pot and let stand 10 minutes. Toss in toasted almonds, fluff rice with a fork, then serve.

Raw Apple Cake

 

4 cups  APPLES, diced

2 eggs

2 cups sugar

1 cup chopped nuts

1/2 teaspoon salt

1/2 cup oil

2 teaspoons cinnamon

2 cups flour

2 teaspoons baking soda

 

Mix all ingredients together and pour into a greased and floured 9 x 13 inch pan.  Bake at 350* 55 minutes or until toothpick comes out clean.  Sprinkle with powdered sugar when partly cooled if desired.

Baked Cream Cheese Spaghetti by da*n delicious

 

 

 

BAKED CREAM CHEESE SPAGHETTI

A baked spaghetti casserole that’s amazingly cheesy and creamy. It’s comfort food at its best, and EASIEST!

INGREDIENTS:
  • 1 pound spaghetti
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • Kosher salt and freshly ground black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon crushed red pepper flakes, optional
  • 1/2 cup whipped cream cheese
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh parsley leaves
DIRECTIONS:
  1. Preheat oven to 350 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray.
  2. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  3. Heat olive oil in a large skillet over medium high heat. Add ground beef and onion and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; season with salt and pepper, to taste. Drain excess fat.
  4. Stir in crushed tomatoes, basil, oregano, parsley and red pepper flakes; season with salt and pepper, to taste.
  5. In a small bowl, whisk together cream cheese and sour cream.
  6. Add pasta to the prepared baking dish and layer with cream cheese and beef mixture; sprinkle with cheeses.
  7. Place into oven and bake until bubbly and heated through, about 15-20 minutes.
  8. Serve immediately, garnished with parsley, if desired.
