Hi, February greetings to one and all!  Hopefully everyone is pretty much shoveled out and ready to face a new month this time with Valentine's Day and Super Bowl recipes to share and enjoy along with our favorites.

 

Last month, our friend @walker was kind enough to share her delicious Slow Cooker Beef recipe (yum!).  Let's find a terrific veggie to go alongside:

 

 

Slow Cooker Brisket of Beef

 

1 whole well-trimmed beef brisket (about 5 lbs.)

2 teaspoons minced garlic

1/2 teaspoon black pepper

2 large onions, cut into 1/4" slices and separated in rings

1 bottle (12 ozs) chili sauce

12 ozs. BEEF BROTH (option...Dark Ale or Water)

2 tablespoons Worcestershire Sauce

1 tablespoon packed brown sugar

 

Place brisket, fat-side down in slow cooker.  Spread garlic evenly over the brisket; sprinkle with pepper.  Arrange onions over brisket.  Combine chili sauce, BEEF BROTH, Worcestershire sauce and brown sugar in bowl; pour over brisket and onions.  Cover and cook on low for 8 hours.

 

Turn brisket over; stir onions into sauce and spoon over brisket. Cover and cook another 1-2 hours on low or until brisket is fork-tender.  Transfer brisket to cutting board; cover with foil to keep warm and let stand for 10 minutes.

 

Stir cooking liquid, then let stand 5 minutes to allow fat to rise.  Skim off fat and discard.  (Cooking liquid may be thinned to desired consistency with water or thickened by simmering, uncovered, in saucepan.)  Carve brisket across grain into thin slices.  Spoon cooking liquid over brisket, if desired.

RED POTATOES with BEANS

 

1 1/2 lbs. fresh GREEN BEANS, trimmed

1/3 cup water

6 small RED POTATOES, cut into wedges

1/2 cup chopped RED ONION

1/2 cup Italian salad dressing

 

Place BEANS and water in 2 quart microwave-safe dish.  Cover and microwave on high until tender, 6-8 minutes.

 

Meanwhile, place the POTATOES in a large saucepan and cover with water.  Bring to a boil. Reduce heat; cover and cook until tender, 10-15 minutes.  Drain BEANS and POTATOES; place in a bowl.  Add ONION and dressing; toss to coat.  Can be served hot or cold.  Serves 4-6.

Escalloped Apples & Cranberries

 

1 pkg  Stouffer's® Harvest Apples

1 can  Cranberry Sauce, whole, canned

 

Preparation Steps

  1.  In a bowl,gently chop Escalloped Apples and combine with cranberry sauce.
  2. Gently fold until well blended.
  3. Pour mixture into a greased baking pan. Spread evenly.
  4. Bake in a 375°F conventional oven for 35-40 minutes.
  5. Let sit 10 minutes before serving.

Wonderful side for sandwiches, too!

@Zhills  I never heard of these apples. Are they in freezer section? Sounds delicious.

@godi Yes, they are frozen.  This takes on a completely new flavor when combined with the cranberries and baked...Yum!

30 Minute Ground Beef and Rice Skillet

 

1.5 lb ground beef

1 yellow onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon salt

1 teaspoon pepper

10 oz can Rotel Diced Tomatoes & Green Chilies (undrained)

1 ½ cups beef broth

1 cup long grain rice

2 tablespoons Worcestershire sauce

1 cup shredded Cheddar cheese

parsley for garnish if desired

 

  1. In a large skillet, brown ground beef over medium-high heat. Drain and return to skillet. While meat is browning, dice onion and bell pepper.
  2. Add onion, pepper, garlic, salt, and pepper to meat and stir to mix. Cook 3 minutes stirring occasionally.
  3. Add beef broth, rice, Rotel, and Worcestershire to the skillet and stir to mix. 
  4. Bring to a boil, reduce heat and cover. Simmer for 20 minute or until rice is tender.
  5. Remove from heat and sprinkle with cheese. Serve with chopped parsley if desired.

@house_cat ... good ingredient for the month of February❣️  This recipe reminds me of my mother.  She put love into everything.  This was a special dessert of hers and....yes, everyone LOVED it❣️ 🤗  

GERMAN CHOCOLATE TRIFLE

 

1 German Chocolate Cake Mix

1 (6oz) pkg. Chocolate Instant Pudding

Heath Bars

Cool Whip, thawed

 

Bake a German Chocolate Cake in 9x13" pan.  Let cool.

Take 1/2 (or more) of the cake and break into pieces.  Place these in the bottom of a trifle bowl or deep dish bowl.   (Remaining cake can be frozen or eaten separately.) 

Mix up one 6 oz. package of Chocolate Instant Pudding and spread over the cake pieces.  Crush one package of Heath Bars (or buy bits if found).  Put half on top of above. Spread Cool Whip on top of that.  Sprinkle with remaining Heath Bar pieces.  Refrigerate.  When serving...use large spoon to dip into bottom of dish and get a little of everything❣️

Garlic Shrimp from Skinnytaste
 
Inspired by the flavors of Spain...

 

1 1/4 lb large shrimp, peeled and cleaned

6 cloves garlic sliced thin

1 1/2 TBSP good Olive Oil

crushed red pepper flakes to taste

1/4 t sweet Spanish paprika or more to taste

 

In a lg skillet, heat oil on med & add garlic & red pepper flakes

Saute til golden, about 2 mins, do not burn.

 

Add shrimp & season w/ pinch of salt and paprika

Cook 2-3 mins til shrimp is cooked through.  Don't overcook or it will become tough and chewy.

Add fresh parsley and serve over rice, pasta, zoodled veggies etc.

 

Serving 4 oz cooked    Calories 154, Carbs, 3g, Protein, 20g, Fat 6.5g, Sat fat 1g

Cholesterol:  178mg
