Occasionally I get a craving for Caesar dressing.  I am leery of raw eggs and I don't want to buy pasteurized eggs.  I usually end up purchasing some made in house at my local gourmet market but it is more dressing than I want.  Ran into this recipe that uses mayo in place of the raw eggs.  I thought it was pretty good for a recipe that is just using what you have on hand. 

 

1 small garlic clove, minced
4 olive oil packed anchovy fillets, drained
1 T fresh lemon juice
1 T red wine vinegar
1/4 cup extra-virgin olive oil
2 T mayonnaise
1/4 cup finely grated Parmesan cheese

Kosher salt and freshly ground black pepper

 

In a blender or food processor puree the garlic, anchovies, lemon juice, vinegar, olive oil and mayonnaise until smooth.  Add the cheese and pulse a few times,  Salt and pepper to taste.
