Extra Crumb Cinnamon Streusel Sour Cream Coffee Cake

Here's what's baking at my house today.

This recipe sounds so good and will surely make my house smell delightful.

I thought I'd share.

INGREDIENTS
  • CINNAMON STRUESEL TOPPING:
  • 1¼ cups sugar
  • 1½ cups sifted all-purpose flour
  • 1 tbsp. cinnamon
  • 6 tbsp. butter, melted
  • BROWN SUGAR FILLING:
  • 1 cup packed light brown sugar
  • 1½ tbsp. cinnamon
  • ¼ tsp. nutmeg
  • 3 tsp. unsweetened cocoa powder
  • ¼ tsp. salt
  • CAKE:
  • 1½ sticks butter, softened
  • 1½ cups sugar
  • ⅓ cup packed light brown sugar
  • 2 tsp. vanilla extract
  • 3 large eggs
  • 3¾ cups all-purpose flour, sifted
  • 2½ tsp. baking powder
  • ¾ tsp. salt
  • ¾ cup sour cream (I use Greek yogurt sometimes)
  • 1½ cups milk

 

INSTRUCTIONS
  1. Preheat the oven to 350 degrees Fahrenheit and place a rack in the upper third of the oven. Line a 13x9 pan with parchment paper, spray with nonstick spray, or grease with butter or coconut oil.
  2. For Cinnamon Struesel Topping- In a medium bowl, whisk together the sugar, flour and cinnamon. Stir in the butter until evenly coated and set aside.
  3. For Brown Sugar Filling- In a small bowl, whisk together the brown sugar, cinnamon, nutmeg, cocoa powder and salt. Set aside.
  4. For Cake- Using an electric mixer with a paddle attachment, beat together the butter and sugars until very well combined, about 4 minutes.
  5. Beat in the vanilla.
  6. Add the eggs, one at a time, beating for 1 minute after adding each one. Scrape the sides of the bowl as needed.
  7. In a small bowl, whisk together the flour, baking powder, and salt.
  8. In another small bowl, whisk together the milk and sour cream (or yogurt) until well combined. No need to whisk out all the lumps.
  9. With the mixer on low speed, add ⅓ of the flour mixture to the batter.
  10. As it's mixing, add ½ of the milk mixture.
  11. Add another ⅓ of the flour mixture.
  12. Add the rest of the milk mixture.
  13. Add the remaining ⅓ of the flour mixture and mix until well combined, scraping down the sides of your bowl.
  14. Spread half of your batter in the bottom of your prepared pan, making sure to spread it to the edges.
  15. Sprinkle your brown sugar filling on top of the batter.
  16. Dollop the rest of your cake batter on top of your filling, using a spatula to spread the batter across the pan.
  17. Using a butter knife, gently swirl the filling into the batter.
  18. Sprinkle all of the topping on your cake.
  19. Bake for 50-55 minutes, or until the cake is golden brown and a toothpick comes out clean. Allow to cool before serving. Cake will last at room temperature for about 5 days. Enjoy!

Wow...this should have a lot of flavor to it. Cocoa powder must add a depth, how interesting! This recipe makes me wish I was a coffee drinker as I bet it would go really well with a warm cup. Can't wait to hear how it came out for you!

It's cooling on a rack right now.  I'll probably have a piece with a cup of tea come late afternoon, but just a word of caution - IT'S A HUGE CAKE!  Or as my husband says, "It's YOOGE!"  If it's as good as it looked in the picture, I'll be sharing it with coworkers tomorrow.  I don't have enough freezer space to freeze it and it's much too large for us.

@house_cat  That's funny!!  I sure hope so, maybe you could open your kitchen window so I could at least smell it baking? haha

 

You are the second person today giving me a recipe that falls into the number 1 category of all-time favorites.  This is a mexican dish.

 

Wow, I'm going to dream about my 2 favorites tonight.

Okay, here's my official review for anyone who plans to make this recipe:

 

The cake and the filling were excellent - I will definitely make it again.

The crumb topping, however, was much too dry and crumbly.  I think  it requred twice the amount of butter stated in the recipe.  If I make it again I will not increase the butter, but rather I will make half as much of the crumbs.  Other than that it's a definite 👍 .

Here's my problem with this  - - sounds so good but I live alone. If I made half the great stuff you all post, I'd be the size of a house!
