Eggs In Potato Nests

1 51/2 ounce pkg. hash brown potato mix with onions

3 tablespoons butter...melted

1 egg...beaten

1 teaspoon salt

8 eggs

8 tablespoons half and half...OR milk

Heat oven to 400*. Put potatoes in bowl and cover them with VERY hot water. Let stand for 10 minutes. Drain thoroughly. Toss potatoes with butter, egg and salt. Press about 1.3 of a cup potato mixture with the back of a spoon firmly in the bottom and up the sides of 8 greased 6 ounce custard cup or use muffin pan. Place custard cups on a cookie sheet. Bake for 20 minutes. Remove from oven. CAREFULLY break 1 egg into each potato nest. Pour 1 tablespoon half and half OR milk over each egg. Bake 15-18 minutes longer or til eggs are desired doneness. If needed, loosen edges of nests with a knife to loosen from pan. Lift out of cups or muffin pan using 2 forks . Place on serving plate.
