Easy Apple Cranberry Relish
This quick, two-ingredient fruit relish takes just a couple of minutes to stir up, yet is special enough to serve for any occasion.
Recipe Ingredients:
1 (12-ounce.) package STOUFFER'S Escalloped Apples, defrosted according to package directions
1 (16-ounce) can whole berry cranberry sauce
Cooking Directions:

Pour mixture into a greased baking pan. Spread evenly. Sprinkle with choice of topping and bake in a 375°F conventional oven for 35-40 minutes.
Let sit 10 minutes before serving. Makes 3 cups.
You could use double the amount of apples. Still delicious!

It will take a whole lot of apples to feed 40 people...at lease one for each person. Maybe you can make them in a crock pot.
I would peel and cut apples into thick slices. Put them in a crock pot with lots of butter and either brown or white sugar and cinnamon and let them cook unril they're soft but not mushy.
If you over cook them, you will have applesauce. Always cook them with the lid off. Apples get watery...or use cornstarch as a thickener if you use a lid.
You could also cook them in an oven in your Turkey roasting pan.
If you wish you could add nuts and/or raisins or dried cranberries too.

I would use an apple crisp recipe and leave the topping off. I think that would be very similar to Honey Baked Hams.

I guess I wasnt clear enough with my request. I did mean sliced baked apples not whole baked. Sorry. I did see some really good suggestions though.
Kate2357, your idea of sauteing them and serving cold is probably the easiest. I'll try that first on a small scale. The crock pot idea is ineteresting too! Actually all the ideas are worth trying, thank you!

I use about 15 pounds of apples for 50. It is a lot of work . Do you have some help with the meal?

@DonnaE Pillsbury has a recipe for Cresent apple dumplings, they are easy and delicious.
