Easy Spanish Chicken with Rice

This is really good and easy to put together-

Spanish Chicken with Rice

2 1/2 lbs. boneless, skinless chicken pieces

2 T. oil

2 c. white long grain rice (not instant)

1 lg. onion, chopped

2 1/2 c. chicken broth

1 can (16 oz.) diced tomatoes (with juice)

1 c. chunky salsa (what ever heat you like!)

1 T. garlic powder (I used 1/2 T.)

1/2 t. turmeric

1 pkg. (10 oz.) frozen peas (can keep frozen or thaw)

1/2 c. pimientos, chopped

1/2 c. sliced black olives

In large skillet, brown chicken in oil, remove chicken and cover with foil to keep warm. Add rice and onion to skillet, saute 5 minutes, stirring occasionally. Add the next 5 ingredients, bring to a boil. Add chicken back in, cover and simmer 25 minutes (until rice is done). Stir in peas, pimiento and olives, cook 5 more minutes, until heated through.

* of course "I" have to serve with some cheddar cheese and sour cream*
