I love the sub sandwich pic.  Is it available to buy or do you make it yourself?  I make rollups and they always go fast.

I would have cold foods to avoid having to warm up the food.  Cold sandwiches, macaroni, potato and pasta salad.  Have popsicles in different flavors for dessert.

I would order mini subs from a place like Jersey Mikes or have a sandwich tray made from a grocery store.  Grocery stores usually have other options besides sandwiches.  Costco also has nice food trays.  Pinwheels, wings, hot foods, fruit and veggie trays.  Costco also has good cookies!

Hi @BunSnoop I'm so glad you have helpers coming to your aid.

 

I would keep it very simple--2 rotisserie chickens from Sam's, they have really nice and HUGE already prepared salads--Greek with feta cheese, blueberries and walnuts, or a Cobb salad with all the fixings or a Caesar salad. The dressings are included. Then round it out with a tub of potato salad and maybe a baguette/butter or croissants. 

 

For dessert--who doesn't love a chocolate chip cookie?

 

Note: I always cut the chicken off the carcass and debone as much as I can and then put it in the freezer. If we are having chicken for dinner, I defrost and heat in the air fryer.

For ease of prep and good lunch food, I recommend Costco trays of something if you live near to one. Otherwise, pizza and fruit.

@Meowingkitty A HUGE yes for this!  If someone doesn't want the bread, it's great to as is with the salad!  A black bean and corn salad would be good and easy too.

 

Also Yasso bars are a good, cool and easy dessert!  Mint, chocolate fuge, etc.!

How about brunch?  I've been seeing all these recipes for eggs, cottage cheese, veggies baked together. Its like a quiche when done but no crust & lots of protein. 

 

Saw one on Facebook today:  spinach on bottom cottage cheese, eggs, red pepper flakes & bake. 

 

I made an egg & cottage cheese bake with chives a couple weeks ago & it was good. 

 

You could serve with fruit.

This is not going to look great in writing lol but it is such a simple tasty meal even my meat loving hisband loves it!  Totally unexpected to love it when I first tried it. Takes about 10 minutes to whip up, looks lovely, and can tailor to suit anyone's tastes.

 

You can make a couple dependind how many people you expect and mix it up in terms of adding extras such as crumbled bacon, spinach or whatever your fancy!

 

Throw in a light green salad and voila! good to go!

 

Baked Cottage Cheese Egg Dish

Ingredients:
- 1 cup cottage cheese (full-fat)
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh chives (optional)
- 1 tablespoon olive oil or butter (for greasing)

Instructions:
1. Preheat your oven to 375°F (190°C).
2. Grease a baking dish with olive oil or butter.
3. In a large mixing bowl, combine the cottage cheese, eggs, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
4. Pour the mixture into the prepared baking dish, spreading it evenly.
5. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is lightly golden.
6. Remove from the oven and let it cool for a few minutes before slicing.
7. Garnish with chopped chives if desired and serve warm.

Serving Size:
Serves 4.

I totally agree. Huge yes from me too. Its got a lot of appeal...recognizable to many palates,  hot or cool, sandwich, salad or both and cool desert after all that work theyll do and pretty easy for you.
