Easy STUFFED PEPPER SOUP! Comforting and Delicious Especially in Winter!

Easy Stuffed Pepper Soup is a good one to make especially during the winter months.  Serve with some crusty bread if desired.  If you don't have the Italian sausage, just use all ground beef (2 pounds.)  If you like a little extra zip to this soup, you can also add a can of Rotel.  download.jfif

 

  • 1 ½ pounds lean ground beef
  • 8 ounces Italian sausage or ground pork sausage
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 6 cups reduced sodium beef broth
  • 28 ounces canned diced tomatoes with juices, 1 can
  • 15 ounces crushed tomatoes 1 can
  • 2 green bell peppers chopped
  • 1 red bell pepper chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian Seasoning
  • 1 teaspoon black pepper
  • 2 cups cooked rice white or brown
  • 2 tablespoons chopped fresh parsley
  • In a large pot or Dutch oven, cook the meat with onion and garlic over medium-high heat until no pink remains. Drain fat.
  • Stir in the broth, bell peppers, crushed and diced tomatoes, Worcestershire sauce, Italian seasoning, and pepper.
  • Bring to a boil, reduce the heat to medium-low, and let simmer uncovered for 25 to 30 minutes or until peppers are tender and the soup has slightly thickened.
  • Stir in the cooked rice and parsley and simmer an additional 5 minutes or until heated through. Taste and season with salt and additional pepper if desired.

@ciao_bella Thanks for the recipe!  I love stuffed pepper anything!

 

Being the lazy retiree that I am, I often do a casserole.  I make the filling then line a pan with the peppers cut in half, add the filling, put pepper pieces on top, and put ketchup on top before they are done so it can brown, and bake.  No idea how long, just until the top browns and the peppers are soft.

 

I also use poblano peppers instead of bell peppers if I have them and have become a real fan.  I like to roast the peppers first a little so they get a little brown.  And you can also take the skins off if you are fancy, which I am lazy rather than fancy now.

Sounds a lot like our "ages old" family casserole.   I use Minute Rice® and it absorbs a lot of the liquid.

I love this with crusty French artisan rolls right out of the oven with butter. I make a version of this, but yours looks amazing! I will give it a try!
