My parents had a huge rhubarb patch and I hated the stuff we a child. However, my DH loves it so I make some kind of rhubarb dessert each spring. @ It is also called pie plant in some areas.

Perhaps the "Jiffy" brand of cake mix that is sold in smaller amounts?

Jiffy cake mixes are 9 ounces.

I went to 4 grocery stores and could not find the Jiffy. They only had a few muffin boxes. So, I will have to guesstimate the amount of the cake mix needed.

It layers itself to be a sort of right side  upside down cake! the Rhubarb sinks to the bottom , in other words and the cake and cream make a custardy, cakey layer on top..

 

Here is mine:

 
 
  • 1 box yellow cake mix
  • 4 cups chopped rhubarb
  • 1 1/2 cups sugar
  • 1 pint heavy cream, unwhipped
:9 x 13 cake pan
  • Preheat oven to 350°F.
  • Lightly grease a 9 x 13 cake pan.
  • Mix up the cake mix according to the directions on the package and pour into the prepared cake pan.
  • Combine rhubarb and sugar; stir until evenly mixed. Sprinkle evenly over the top of the unbaked cake mix.
  • Pour the cream over the top of the cake and rhubarb.
  • Place in the preheated oven and bake for 1 hour.
  • Topped with whipped cream if desired.
  • Store in the refrigerator.

I made this recipe over the weekend and everyone loved it!!!! Thank you soooo much for sharing it. It's super easy to make too! I cut down the sugar to 1 cup and it was still plenty sweet. I always find these recipe so interesting how the ingredients flip while cooking so the cake ends up on top with the delicious creamy rhubarb layer on the bottom. I will definitely be keeping this recipe to make again!! It doesn't need any whipped cream topping. It's yummy plain too.  

 

Our rhubarb plant is producing a ton so I'll be trying the other recipe on this thread too. I know this one will be another winner since you all provide stellar recipes!! Smiley Happy

My grandma used to do the same thing - we would have this as a side dish, almost lke apple sauce.....   great memories

a lil OT - just wanted you to know that I used your recipe for baked corn beef topped w/the mustard + apricot jam - it was delicious. I made it a while ago after St Patrick since I bought 2 briskets.

hiya @butterfly123  trying to be brave and try rhubarb - would 1 stalk = to 1 cup?

 

had my first watermelon this past Memorial Day - so sweet - how I missed ya duirng the winter. I know it is sold but I only eat it after Memorial Day
