4 Cups Rhubarb cut into 1” pieces
1 Cup Sugar
1 9 ounce white cake mix
1 Cup Water
1 Small Package Red Jello
1/3 Cup butter or Margarine melted
Spread rhubarb in greased 9x13 pan
Sprinkle on sugar
Sprinkle on jello
Sprinkle on dry cake mix
Pour water evenly on top of other ingredients
Drizzle on melted butter or margarine
Bake at 350 degrees for 1 hour.
May be served with whipped cream or ice cream.

I was thinking of you having rhubarb and remembered my DM makes this dessert.
I know the layering of the ingredients is strange but the cake is yummy.

I never see rhubarb in the grocery stores here. Wish I would because this sounds so good and I love rhubarb/strawberry.

I have made this same recipe for years but without the jello..It is yummy and @Kachina624 you can use frozen rhubarb.. i can still find that at Sprouts..
It layers itself to be a sort of right side upside down cake! the Rhubarb sinks to the bottom , in other words and the cake and cream make a custardy, cakey layer on top..

@butterfly123 reminds me of my mom as well. She grew rhubarb in the garden and we would break off a stalk, dip it in sugar and eat it...as well as the pie she made, yum!

I would enjoy this cake with my favorite warm vanilla sauce:
1/2 cup butter
3/4 cup sugar
1/2 cup evaporated milk
1 tsp vanilla
Melt butter in saucepan. Stir in milk and sugar and bring to boil, stirring constantly until slightly thickened. Take off heat and stir in vanilla.

The recipe I posted tastes like a rhubarb crumble cake. My DM used strawberry jello.
Your sauce would be delicious.

I have so much in my garden right now. I love eating it with salt but I end up with a stomach ache because I eat too much. Tomorrow I am trying Rhubard Oat bars..

I never had rhubarb and probably never will. Although I'm very adventurous and like to surprise my palette- sushi, snails, raw oyster and clams, alligator, goat ertc...
Okay being a big baby about this -
Rhubarb looks like celery and I dislike the taste (not texture) of celery.
Rhubarb pairs with strawberries and I dislike strawberries
Can you describe it for me on what it tastes like? I read that it is tart.Does it stay a bit crunchy or is it mush when in a pie?
