Easy Peach Cobbler

1 stick butter

¾ cup sugar (sprinkle about 1/4 of this on peaches)

1 cup milk

1 cup flour

½ teaspoon salt

1 ½ teaspoon baking powder

3 cups sliced fresh peaches

cinnamon to taste on peaches -optional

Preheat oven to 375. Put butter in 8 x 11.5 glass baking dish into oven to melt.

Whisk together flour, sugar, salt and baking powder. Add milk and whisk until well blended. Once butter is melted in pan, pour half of batter in pan. Arrange peaches on batter, starting with corners then the middle. Add remaining batter. Bake 45 minutes at 375.

I have made 4 peach cobblers over the past month. While all were good, my son liked my first one that I made the best.I like the first one and this last one.

The recipe above is the 4th one that I made. The main difference, that I can think of, between this and the 1st is that I made a simple syrup and poured onto the peaches (3 ½ cups) and let it sit for about 10 minutes before adding to cobbler.

I am getting tired of peach cobbler! Lol

Anyway, if I do make one more cobbler, I will make a simple syrup again for the peaches. I will also put a baking pan underneath to make sure the drips land there instead of on my oven. I used a square pan on the first one and it wasn’t big enough!

My mom always makes this with a 28 oz. can of peaches and she pours in all of the juice.She always uses an 8 x 11.5 dish.

My other Easy Peach Cobbler

3 ½ cups sliced peaches

simple syrup:

½ cup sugar

½ cup water

Boil until sugar melts. Pour over peaches and let set for about 10 minutes. Sitr occasionally.

Whisk together flour, sugar, salt and baking powder. Add milk and whisk until well blended. Once butter is melted in pan, pour half of batter in pan. Arrange peaches and juices on batter, starting with corners then the middle. Add remaining batter. Bake 45 minutes at 375. Place baking pan under dish to catch any juices.

I also wanted to add that blanching the peaches for a minute really makes peeling them so much easier! They come right off using no knife…just my hands.
