Easy Cranberry-Feta appetizers

Wish I had seen this before Christmas.  These easy appetizers would be great for any party though.  You could use a fruit preserve instead of cranberry sauce.  Maybe throw some chopped walnuts on top of the cranberry sauce, too.

 

Ingredients:

1 (17.3-oz.) box frozen puff pastry (2 sheets), thawed

3/4 cup whole cranberry sauce

1/2 cup crumbled feta

1 large egg

 
  • Arrange racks in center and lower third of oven; preheat to 375°. Roll each puff pastry sheet to a 12" x 9" rectangle. With a long side facing you, spread one sheet with cranberry sauce, leaving a 1/4" border at the top and bottom. Sprinkle feta over sauce. Top with second sheet of puff pastry, pressing tops and bottoms to seal.
 
  • Cut top to bottom into 12 (1"-wide) strips. Working one strip at a time, twist ends in opposite directions 5 to 6 times, then bring together to form a circle. Arrange on 2 parchment-lined baking sheets.
 
  • In a small bowl, beat egg to blend. Brush ends of wreaths with egg wash; press ends together to seal. Brush pastry with more egg wash.
 
  • Bake wreaths until puff pastry is deeply golden, 25 to 30 minutes. Let cool for 10 minutes before serving.

this looks good and we make our own cranberry sauce, so this will be perfect with the "leftovers."

@LdyBugz  Thanks for the recipe! I copied it and pasted it into my Thanksgiving notes for this year. I'm always trying to find ways to add cranberry items into my T-Day meal that people will actually eat. This may be it! I'd have to bake them before the turkey goes in, but I'll test it to see if they "age" well over several hours.

@LdyBugz this sounds SOO good. Sweet, tart, creamy and crunchy, fruity, salty with a buttery finish. Wow I love when something hits multiple sensory notes. And so easy to make!!! Thank you!

@PA Mom-mom  Oh you're welcome!  I thought these looked good, and super easy.  I wonder if you can prepare these the day before, tightly wrap, and refrigerate until ready to bake.  I haven't worked much with puff pastry so I might test this to see how it works.

 

I think the puff pastry will help keep these on the lighter side instead of a heavier dough.  It's frustrating when folks fill up on appetizers and then not eat much for dinner!  

 

I want to try the cranberry recipe, and try it with apricot preserves or orange marmalade.  Serve with a glass of sparkling white wine or champagne for a perfect nibble!

@LizzieInSRQOh you're welcome!  I'm anxious to try this recipe.  And you're right that it will hit several sensory notes.  Wish I had these right now!  I'm hungry!
