This is a throw-together!

I've only ever made cupcakes from this recipe. For cupcakes, bake for about 22 minutes or according to oven. Batter will be thin.

 

2 C sugar (or less)

2 C flour

½ C cocoa

2 tsp. baking soda

1 tsp. baking powder

1 C milk

1 C salad oil (3/4 C works better)

1 C boiling coffee

2 eggs (3 if small)

 

350 degrees

 

I never use all that sugar. And I always add vanilla & almond extract.

 

Frost or not.

How many cupcakes do you get in a batch? Also, do you typically frost them?

Yes, I usually frost w/ butter cream icing. But they are good plain, too.

Yields about 2 dozen. Only fill 3/4 full. They do rise.

@Harpa @That looks like a great recipe...do you mix the liquid ingredients together before adding to the dry?

I checked online at allrecipes ...have very similar...9 by13 pan for 40 min.

  Hi @Harpa 

I've seen that "coffee" cake.

 

As I recall, canola oil doesn't contribute any taste to compete with the coffee & cocoa.

Many other oils add a distracting flavor, especially when adding so much.

Yum!!! The boiling coffee should enhance the chocolate.

I like to put espresso powder in hot chocolate or baking sometimes.

Just made Hershey's Perfectly Chocolate cake for DH's birthday Monday.
