Since some of us have a lot of zucchini in our gardens right now..........

Easy Cheesy Zucchini Casserole

1 cup mayonnaise

1 minced onion

1 beaten egg

Dash of salt and pepper

1/4 cup Parmesan Cheese

1 cup shredded sharp cheddar cheese

3 medium zucchini, diced, not peeled

Bread crumbs for topping

Mix all ingredients, except bread crumbs, in a bowl. Place in a greased casserole dish, about 8 X 8. Sprinkle with dry bread crumbs. Bake, covered, at 350 degrees for 30 minutes. Uncover and bake an additional 30 minutes. Serve hot.
