Sparkling wine signals a celebration, and this bright and refreshing cocktail is a wonderful way to welcome the new season. It was inspired by the classic Italian cocktail, the Aperol Spritz, which features the bright orange, bittersweet liqueur called Aperol. We swapped in limoncello to give the drink a concentrated citrus flavor that’s perfect for spring. Aromatic ginger beer adds a spicy note.

 

Ingredients

  • Ice cubes
  • 2 fl. oz. (60 ml) limoncello
  • 1/2 fl. oz. (15 ml) ginger beer
  • 1/4 fl. oz. (7 ml) fresh lemon juice 
  • 1/2 fl. oz. (15 ml) soda water
  • 3 fl. oz. (90 ml) Prosecco or other sparkling wine 
  • Fresh mint sprigs for garnish
  • Lemon slices for garnish

Directions

Fill a wine glass half full with ice. Add the limoncello, ginger beer and lemon juice. Top with the soda water and Prosecco and stir to combine. Garnish with mint sprigs and lemon slices and serve immediately. Makes 1 drink.

I'd like something for a light breakfast on Easter.

 

I never cared for breakfast, but like lunch and love dinner.  I snack through the day as I cook a very big Easter Dinner.

 

The only egg I really look forward to is deviled.
