Easter Peanut Butter and Coconut Cream Egg(candy)

These were sent to me from a friend and I haven't made them but thought some might be interested for Easter. If anyone makes these please post reviews.

Doris Harper's Peanut Butter Eggs

1 cup creamy peanut butter

8 ounces cream cheese, softened

1 1/2 lbs 10X sugar(6 cups)

pinch of salt

1 teaspoon vanilla extract

1 lbs milk chocolate candy wafers(I use Merkins)

combine peanut butter, cream cheese, 10x sugar, salt and vanilla and mix well. chill for 2 hours. Mixture should be soft but firm. Roll into egg shapes using about 1 teaspoon of dough. Place on a waxed paper lined sheet. Melt chocolate and dip eggs into the chocolate. Place back on the waxed paper lined cookie sheet to dry.

Doris Harpers Coconut Cream Eggs

3 ounces cream cheese, softened

2 1/2 cups 10 x sugar

1/2 teaspoon vanilla

pinch of salt

2/3 cup Baker's coconut

2 lbs. dark chocolate candy wafers(again I use Merkins)

Crushed dry roasted unsalted peanuts(opt)

Combine cream cheese, 10x sugar, vanilla, salt and coconut, mix well. Chill for 2 hours. Roll into egg shapes and place on a waxed paper lined cookie sheet. Cover with plastic wrap and chill for 3 or 4 days.

Dip eggs into melted dark chocolate immediately than roll in crushed peanuts(opt). Place eggs onto waxed paper lined cookie sheet. Keep eggs refrigerated.
