Help!  Time got away from me and I haven't even planned my Easter menu.  Since there's only going to be four of us, I want to serve a brunch rather than our usual Easter feast.  Can y'all give me some ideas for brunch dishes?  TIA!

@Bluffbaker I just found this recipe this morning and am planning on making it for Easter:

 

CHEESY ASPARAGUS GRATIN:

 

Cheesy Asparagus Gratin - A 5-min appetizer (or side dish)! Simply roast your asparagus with desired herbs, top with cheese and bake until cheesy goodness!

 

INGREDIENTS:
  • 2 pounds asparagus, trimmed
  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Kosher salt and freshly ground black pepper, to taste
  • 4 ounces brie cheese, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley leaves
DIRECTIONS:
  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Place asparagus in a single layer onto the prepared baking sheet. Stir in butter, garlic and Italian seasoning; season with salt and pepper, to taste.
  3. Place into oven and roast for 8-10 minutes, or until tender but crisp. Top with cheeses and bake for an additional 3-4 minutes, or until melted.
  4. Serve immediately, garnished with parsley, if desired.

Bluffbaker.....I am doing a brunch also.....6 adults and 5 children.  The family always wants my traditional items so I stick with those which are....Mimosas!..😀....Farmer's Casserole (hash browns, ham, cheese, green onions with egg/milk mixture), bacon, sausage links with apples, fruit, coffee cake, cinnamon rolls and chocolate-chip pancakes for the kids!  I always have to add one new item so this year I am trying a recipe David fixed last Sunday....a ham/pineapple quiche.

Oh @walker I very rarely watch ITKWD but I did catch the opening when he was putting that quiche together and it did look delicious . . . your brunch sounds scrumptious, enjoy!

@walker, I missed ITKWD last week.  I'll have to look the ham pineapple recipe quiche up on the website.  Your menu sounds delicious!

Bluffbaker......the recipe is called Hawaiian Quiche and is listed in David's Recipes.

Thank you!!!!!  I was just about to ask if you had the recipe!  Before we became empty nesters, I'd always cook a ham for Easter and a pineapple cheese casserole on the side. David's recipe sounds like an all in one dish!  Can't wait to check it out.

When I do brunches I always serve smoked salmon quiche and one other kind (just in case there is someone who does not like fish).  I have a glass bowl full of cut-up fresh fruit, a platter of toast and a platter of brown sugar bacon.

Hmmmm...the blogger says just by adding 2 Tablespoons of instant vanilla pudding, our fruit bowls can be taken to the next level.   Normally, I am not a box pudding person but I have to try this! 😀
