EMERIL'S AIR FRYER SHRIMP AND GRITS

Did anyone catch Emeril's recipe for the air fried shrimp he served with grits last Wednesday when his new 5.3 qt air fryer was presented as the TSV?  The recipe is not included in the recipe cards that came with the air fryer.

Don't have Emeril's recipe, but here is the one I make:

 

Grits:

3 tbsp butter

1 cup grits

2 1/4 cups milk

2 cups water

 

Shrimp:

3 tbsp butter

1 1/2 lbs 21/25 shell-on shrimp, peeled, deveined, and shells reserved

1 tbsp tomato paste

2 1/4 cus water

3 slices bacon, cut into 1/2" pieces

1 tsp minced garlic

2 tbsp flour

1 tbsp lemon juice

1/2 tsp Tabasco 

 

Melt 1 tbsp butter in medium saucepan over medium heat.  Add grits and stir often for 3 minutes.  Add milk, water, 3/4 tsp salt and bring to boil over medium-high heat.  Cover and simmer over low heat, whisking often, for 25 minutes until thick and creamy.  Stir in 2 tbsp butter off heat and cover to keep warm.

Melt 1 tbsp butter in large nonstick skillet over medium heat.  Stir in shrimp shells for 7 minutes until they are spotted brown.  Stir in tomato paste for 1/2 minute.  Add water and bring to boil.  Cover and simmer over low heat for 5 minutes.  Strain shells through mesh strainer set over bowl to extract all possible liquid.  Add water if needed to have 1 1/2 cups broth.

Cook bacon in wiped-out skillet over medium-low until crisp.  Stir in shrimp, garlic, 1/2 tsp salt, and 1/2 tsp pepper over medium-high heat for 2 minutes until edges of shrimp

just begin to turn pink.  Place shrimp in bowl.

Melt 1 tbsp butter in emptied skillet over medium-high heat.  Whisk in flour for 1 minute.  Slowly whisk in reserved broth until combined.  Bring to boil, then reduce heat to medium-low and simmer for 5 minutes until thickened.  

Stir in shrimp, cover, and cook through for 3 minutes.  Stir in lemon juice, Tabasco, and 1 tbsp butter off heat.

You could make the shrimp in the air fryer but I don't believe you could make the grits!

While I didn't watch Emeril's Air Fryer presentation, I did find his Air Fryer recipe for Garlicky Air Fried Shrinp.

 

Garlicky Air Fried Shrimp

 

INGREDIENTS

  • 2 pounds medium shrimp, peeled and deveined
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons minced garlic
  • 1/4 cup dry white wine
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon zest
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon chopped, fresh rosemary
  •  
DIRECTIONS
1. In a medium bowl, toss the shrimp with salt, cayenne, and olive oil.
2. In the barrel pan of Emeril's 5.3 quart Air Fryer set to 370º F add the butter and garlic and cook for 3 minutes.
3. Add the wine, cream, lemon zest, Worcestershire, and rosemary and continue to cook at 370º F for another 3 to 4 minutes.
4. Add the shrimp and continue to cook for 5 to 7 minutes longer or until the shrimp are opaque and cooked through.

 

  • Serve immediately with a loaf of crusty bread.
