I went back in "Recipes" looking for your roasted veggies recipe you posted.  After going all the way back to January 1, I came up empty.  Can you help me out?  I hit Sprouts today, bought beets, heirloom carrots, peppers, corn, squash and cabbage.  I know that they all won't go together but just want some roasted veggies.  Thanks.

@Hoovermom

Here we go.

Heat oven to 400 degrees.

Just prepare a large bake sheet with aluminum foil.

Spray with olive oil.

Place whole okra, Brussels sprouts,  squash  zucchini

and wide slices of onion, or cauliflower on bake sheet.

Spray.

Sprinkle Mrs. Dash.

Roasting time varies. most take a total of 20 minutes,  turning at mid point.

Occasionally,  I have had to put squash under the broiler a minute.

I just reread your post and saw cabbage.  I have read cabbage can be roasted, but it can't be cut over 1/4 inch.

I haven't done it since I realized frying cabbage only takes the little bit of oil in a cast iron pan you would give the end product since you begin off with much more bulk.

I just stood over it and stired.
