Here's my roasted carrots....thank you for all your help.  Now on to other veggies.

@Hoovermom Thinking ahead, because I am a planner being a former master teacher, HOW are we ever going to roast vegies for a holiday meal when the oven is already over taxed???????

How long do you roast whole carrots?  They look so yummy!

@Sooner :  Thank you....I love those dishes (and all things dishes LOL).  HSN carried a line "Strawberry Street" (made in Sri Lanka) years ago and have never regretted that purchase.  I use them with either gold/silver flatware and it is a beautiful presentation.

@arrabella :  They roasted for 25 minutes @400 degrees (the bottoms got a little too roasted) but they were so good.  @ECBG was a big help.
