I've posted this in years past, but it's so easy and yummy, I thought I'd post again for those who weren't here then..o.r just to remind ME of it...ha!
<----if you search zucchini over there, you will find LOTS of zucchini recipes!
4 to 5 medium zucchini
1 medium yellow onion
Monterey Jack cheese, grated (about 1 1/2 cups)
butter (to taste)
pepper
Slice zucchini lengthwise; slice onion and grate cheese.
Line zucchini in bottom of a 9-inch square pan in one layer.
Dot with butter; layer half the onions on top of butter and zucchini.
Sprinkle with pepper.
Cover with 1/2 the cheese and repeat layering one more time.
Bake at 350 degrees for 45 minutes.

Thank you Diamond. I've copied this. I one time had a whole slew of Zucchini recipes. I'm not sure what became of it so I need to start a new set. Thanks again.
