@haddon9  Thank you for the nice compliment on the Stuffed Pepper Soup!  It is a winner.  I really think you're going to love these Easy Chicken Fajitas.  When I make them and then use the flour tortillas, I like to first spread a little of the sour cream directly on the tortilla, then add all the other stuff, and finally top with some guacamole and a little shredded Mexican cheese or Cheddar cheese... DELICIOUS!   P.S.  When you make the Fajitia Seasoning, it looks like a lot but don't worry...just sprinkle it mostly on the chicken and then a little over the rest of the peppers/onions.  Once it's all mixed up with a drizzle of olive oil, it all comes together and is so tasty.  Don't forget to get a fresh lime and cut it in quarters to squeeze on the top of it when you take it out of the oven.  (Let me know how you like it!)

@AuntG   I like making my own because you can control the amount of salt in it, and it's delicious!.  I also like to use Smoked Paprika instead of regular paprika as well, so if you have smoked paprika, don't be afraid to switch it out for the regular paprika...  Enjoy!

(*IF YOU DON’T HAVE TIME OR THE INGREDIENTS TO MAKE THIS SEASONING, THEN JUST USE A PACKAGE OF STORE BOUGHT FAJITA SEASONING OR EVEN TACO SEASONING COULD WORK) 

 

 

  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder 
  •    
  •  1/2 teaspoon garlic powder

         1/4 teaspoon dried oregano

 

  • 1/4 teaspoon cayenne powder, optional
  •  
  • Salt and fresh ground black pepper

Instructions:

 Light grease a large sheet pan with non-stick cooking spray. Cut chicken and vegetables into strips. Lay the vegetables evenly on the pan and place the chicken on top of them.

Preheat oven to 425 degrees F

Combine seasoning ingredients together in a small bowl. Stir well to combine. Sprinkle most of the seasoning over the chicken, and some of it over the vegetables as well. Spoon minced garlic on top of the chicken and drizzle olive oil over the entire pan. Toss everything well and spread it into an even layer across the pan.

Cook for 15-20 minutes or until chicken is cooked through (165 degrees if you test with a thermometer). Wrap the flour tortillas in foil and place them in the oven to warm during the last 5 minutes of cooking.

 

Remove everything from the oven. Squeeze fresh lime juice over the chicken and vegetables and sprinkle with cilantro. Serve in warm tortillas with extra toppings, if desired.

 

 Desired fajita toppings: Sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese

I saw that recipe on line someplace and did it.  My sheet pan runneth over and I had to use two.  So if you are making these, know tht this is a lot of "stuff" for a sheet pan.
