EASY Sheet Pan CHICKEN FAJITAS

 EASY SHEET PAN CHICKEN FAJITAS 

 

  • 1 1/2 pounds boneless skinless chicken breasts sliced (against the grain) into 1/2-inch thick strips
  • 3 bell peppers I use green, yellow and red , cored and sliced into strips
  • 1 large yellow onion thinly sliced
  • 2 cloves garlic , minced
  • 3 Tablespoons oil (I use olive oi) 
  • 1 lime (*don't omit using the lime, it adds so much flavor when squeezed on the cooked fajitas) 
  • 1/4 cup fresh cilantro , chopped
  • 8-10 small flour tortillas
  • Desired fajita toppings: Sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese

Fajita Seasoning - make your own:

(*IF YOU DON’T HAVE TIME OR THE INGREDIENTS TO MAKE THIS SEASONING, THEN JUST USE A PACKAGE OF STORE BOUGHT FAJITA SEASONING OR EVEN TACO SEASONING COULD WORK) 

 

 

  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder 
  •    
  •  1/2 teaspoon garlic powder

         1/4 teaspoon dried oregano

 

  • 1/4 teaspoon cayenne powder, optional
  •  
  • Salt and fresh ground black pepper

Instructions:

 Light grease a large sheet pan with non-stick cooking spray. Cut chicken and vegetables into strips. Lay the vegetables evenly on the pan and place the chicken on top of them.

Preheat oven to 425 degrees F

Combine seasoning ingredients together in a small bowl. Stir well to combine. Sprinkle most of the seasoning over the chicken, and some of it over the vegetables as well. Spoon minced garlic on top of the chicken and drizzle olive oil over the entire pan. Toss everything well and spread it into an even layer across the pan.

Cook for 15-20 minutes or until chicken is cooked through (165 degrees if you test with a thermometer). Wrap the flour tortillas in foil and place them in the oven to warm during the last 5 minutes of cooking.

 

Remove everything from the oven. Squeeze fresh lime juice over the chicken and vegetables and sprinkle with cilantro. Serve in warm tortillas with extra toppings, if desired.

 

 Desired fajita toppings: Sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese

"Mexican" food is REGIONAL.    In Phoenix, the fajita filling is usually grilled.   (In my area, anyway.)

@ciao_bella  Thank you for posting this!! I love fajitas- I'll definitely make this recipe for lunch or dinner. High protein with lost of vegetables- sounds like a delicious crowd pleaser.  Thank you 🤗

I have never ate Fajitas. My sister makes beef fajitas from a recipe in a cookbook wrote by the restaurant where she used to buy them. 

I can't eat much onion or garlic. Definitely no oregano. My stomach will go on the warpath. LOL!!!

@Nightowlz  Fajitas are delicious- I wish you could try them 🤗. You can substitute dried marjoram or basil for oregano, but I don't know how to replace onions, garlic and peppers.

@ciao_bella This looks great and so easy!  I'm going to give it a try....I'll make one pan wiith chicken and another for my vegan DD and her DH with a vegan chicken.  I'm alway trying to think of something easy for when the family gets together!

 

I want to mention that I think it was you that posted the "Stuffed pepper soup" recipe here over this winter.  I tried making it about a week ago and it came out so delicious with plenty left over!  I just took a container out of the freezer to have for tomorrow. 

 

I will definitely make it again!
