I got this recipe from a blog (Inspired Taste) I subscribe to & it is delicious. I chopped the celery & chives a little in advance & kept it in a small lock n lock container. It's funny but when I make egg salad I have always just used hard boiled eggs, salt & mayo. The lemon juice helps with the avocado & I served the rest of it to a friend a day later. It was a little darker but tasted great. I hope you guys like it!

EASY AVOCADO EGG SALAD

1 medium avocado, peeled with pit removed

2 Tb. mayo (I used low fat, you can also sub low fat yogurt or sour cream)

1 1/2 tsp. lemon juice

4 lg. hard boiled eggs

3 Tb. celery, finely diced

1 Tb. chives, chopped

Salt & pepper to taste

In a medium bowl mash avocado with mayonnaise & lemon juice until creamy but still a little chunky. Peel & dice hard boiled eggs. Stir eggs, celery & chives into avocado until combined. Season with salt & pepper.

I got 3 generously filled sandwiches out of this but the recipe says it makes 1 c. or 2 servings. My sister doesn't really like guacomole (imagine that!) but she liked this
