So, I thought I had the recipe memorized but it's just these 3 ingredients
Bakers Cheese
Flour
Butter
I know it's definitely one pound of Baker's Cheese because that's how it's packaged.
I want to say it's 1# butter
and possibly 8 cups of flour.
I can see the paper it was written on but I've been through everything 10x and nothing.
What you do is cut the butter and baker's cheese into the flour to make a dough. Divide the dough into 4 balls and refrigerate.
When ready, roll the dough out on a floured surface and cut into squares about 2 inch and fill with either a prune or a finely ground walnut filling mixed with sugar and egg white. Roll and seal the ends, bake, cool slightly and roll in powered sugar.
Oh my they are delicious but I can't remember the proportions. I searched the internet, nothing, I found cream cheese but not with bakers cheese, not the same. I even called King Arthur and no help from them either.
Has anyone made anything like this?
I've been so bummed that I don't have all these recipes written down somewhere.

I must confess I've never heard of Baker's Cheese. I had to look it up. Learned something new today. Here it is in case someone else is unfamiar with it.
Basically cottage cheese with some of the moisture drained off. Bakers' cheese has a texture similar to that of fresh ricotta, but with a slightly tangier flavor. It typically isn't available to consumers—most of it is sold for commercial preparations such as blintzes, cheesecakes, pastries and pies.
Bling, do you remember what these things were called? I hope you're able to find a recipe. Since you know how to make them, can you just find a suitable filling recipe?

@Mistreatedbycs These sound just like eastern european kiffles. The Q sells them at the holidays but I don't see them listed now. I still have a tin in my freezer. The tin is gold. Delicious.
Whenever I made them, only three ingredients were called for. Flour, butter and cream cheese. I have never heard of Bakers Cheese. Not saying it doesn't exist, just never heard of it. Can it be Farmer's Cheese? Farmer's Cheese has a dryer consistency than cottage cheese. It's used a lot in eastern european recipes.
Of course, you need the fillings too. I use lekvar and apricot jam. Apricot preserves are too lumpy. Jam is better. Strawberry and raspberry jam also.
Funny, you say that you seal yours. I don't. Just cut out diamond shape dough pieces, plop the jam in the center and pinch two points together leaving two jam openings. And then dust with powdered sugar when cool. Me and hubs have been know to make 100's of them. lol. Everyone loves them. Especially at easter.
Try to Google "Hungarian Kiffles". There is a recipe there and see what you think.

We called them kolache's but all those recipes call for cream cheese
and they are folded like a triangle...those are not these
They are cut in rectangles just a little over the size of a prune, you
put the cooked prune or a half of a prune/or a teaspoon of the nut mixture
in the center and roll. Then you pinch the 2 ends and bake. Then you let
them slightly cool and roll in powdered sugar
They are so rich and flaky and the dough literally melts in your mouth.
Baker's cheese is only available around the holidays and usually in a specialty stores freezer section. They must get it in bulk and repackage in
1# containers, Yes, one year when we couldn't find it, my mom used small curd cottage cheese drained.
Now I'm thinking it's 12 cups of flour, I attempted to make them last year but mine were "tough" so I did something wrong. If no one knows, I might have to experiment with 1/4# and maybe I'll get the proportions right.
You can't believe how 3 ingredient dough tastes so delicious! Flaky tender melt in your mouth.
