Our weather is supposed to be 100+ for 3-4 days starting Saturday so I will be making different kinds of cold salads. Does anyone have a good tasting creamy dressing for pasta salad? I have half a pkg. of TJ "Pennette" (small penne) pasta and want to use it up for a cold salad. Would appreciate some recipes. Even with AC my family doesn't feel like eating a hot meal on these kinds of days.

I thin out Best Foods mayo and Dijon mustard with some white wine vinegar and use that on macaroni salad.
1-1/2 cups mayo
1 T Dijon mustard
2 T white wine vinegar
Salt and pepper

Ive been using the Good Seasons zesty Italian dry packets that you add your own oil and vinegar to. Delicious.

Mornin...I've been using WishBone Creamy Italian on my pasta salad for years.

More times than not I use olive oil, red wine vinegar (we like red wine or pomegranet vinegar over plain white), and a Tbsp Hellmann's. YUM.
If you more love salads on hot summer days I have a great one that we have 2 or 3 times when peaches are ripe, sweet in season. Here goes - enjoy this one as it's really a tasty, easy one.
Any greens/lettuce you enjoy on a big plate
Sliced peaches - yellow, white or mixed your choice
Buy a whole roasted chicken, take meat off the bones (so easy or cook your own seasoned nicely; cut up)
Slivered almonds - as many as you wish; pecans or walnuts work too
Crumbled Bleu Cheese
Layer on your plates, drizzle oil & vinegar, light salt & pepper
This salad is SO good on a hot summer night. We just enjoyed this 2 nights ago. WOW - still as good as we remembered from last summer.

This is from a well known tea room in our town.
Chelsea's Pasta Salad
1 box rotini pasta
1 small packet ranch dressing mix
2 Tbs fresh chopped or 1 Tbs dill weed
Juice of 1/2 lemon
2 Tbs. buttermilk (or a little vinegar added to milk)
1/2 C maynoaise
1/2 C sour cream
4 stalks celery finely chopped
1 small red onion, chopped
1 C thawed frozen small green peas
Cook pasta Aldente. Cool completely. (I use cold water)
In bowl combine dill, ranch mix, lemon juice, buttermilk, mayonaise, and sour cream. Stir throughly, salt and pepper if desired.
In large bowl toss pasta, celery, onion, and peas.
Pour dressing over and refrigerate 6-8 hours.
(I add green pepper and a little more dill).
They served it with a scoop of homemade chicken salad, a small piece of quiche, and mixed fresh fruit.

I think Marie's Creamy Italian dressing......sold refrigerated in the produce department of most grocery stores (at least around here)... would be great on the types of salad you all are talking about.

I like to add packet of dry ranch dressing to the Italian dressing. People really like it, and have given the recipe to many friends and family

While not creamy, I used Neuman's Family Recipe Italian dressing. It has a good non artifcial taste unlike some of the other dressings. I just made a big bowl of pasta salad yesterday. I used fusillli pasta, and I diced onion, green pepper, zuchiini, cucumber and sliced cherry tomatoes. I added sliced olives (green or black your choice), fresh grated pepper, a sprinkle of Ms. Dash seasoning, and the aforementioned dressing. I really don't have a recipe. I serve with grated parmesan cheese but I don't put it in the pasta salad ahead of time as it gets gummy. I also like diced pepperoni at times too but also serve separately as it get moisture logged.
