Christmas Smilies - Snowman

I made your Cherry Coconut Bars over the weekend and they were delicious!...and easy! I shared them with my mom and aunt...they both want the recipe and my mom said that they were addictive! lol

This has always been my favorite. My mom made them every year and still does. I have made them every year as well, since I have been married- nearly 27 years now. They are my son's favorite too- he has already verified that I will be making them when he comes home for Christmas this year! Enjoy!!- Dr.D

Cherry Coconut Bars

  • 1 cup all-purpose flour
  • 3 tablespoons confectioners' sugar
  • 1/2 cup cold butter (no substitutes)
  • FILLING:
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chopped walnuts
  • 1/2 cup quartered maraschino cherries
  • 1/2 cup flaked coconut

Directions

  1. In a bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 10-12 minutes or until lightly browned. Cool on wire rack.
  2. For filling, combine the eggs, sugar and vanilla in a bowl. Combine flour, baking powder and salt; add to the egg mixture. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.
