I am making a Doritos casserole next week for my boss, as it is her birthday, and she eats a lot of chips, doritos and such........Has anyone ever made this??? And if so, how do you make yours.....I am going to be making mine with chicken and beef..........in the slow cooker, as I have a recipe in mind......Any comments on your way would be greatly  appreciated.....Smiley Very Happy

I make this casserole.  This is my recipe... 2 lbs. hamburger, 1 can refriend beans, 1/2 pkg of taco seasoning, chopped onion, medium container of cottage cheese, 8 oz of sour cream, 1 green pepper chopped, nacho doritos and cheddar cheese.  layer it like a lasagna starting with doritos and cheddar and ending w/ doritos and cheddar cheese.

1 pound ground beef

1/2 medium sweet onion chopped

1 large can mild red enchilada sauce

1 can cream of mushroom soup

1 can cream of chicken soup

3 cups shredded cheddar cheese

1 small bag of Doritos or any tortilla chips

1 cup sliced black olives

1 small can chopped green chiles

 

Brown ground beef and drain well. ( I put mine in a colander, then run hot water through it.)

Return to skillet, and add onion. Heat about 5 minutes, or until onion is translucent

Meanwhile add the other ingredients except cheese and doritos in a large bowl and stir to combine

Add ground beef and onions to liquid mixture

In a 9x13 baking dish layer beef mixture, broken Doritos, and cheese

I make 5 layers, ending with cheese

Bake at 375 about 25 minutes until cheese is bubbly

 

This is good with a side dish of corn and a crisp green salad

Your dish sounds interesing and fun.  Since you are asking for comments I would only put beef on one half and chicken on the other half because so many perfer one meat or the other . Personally I love chicken and beef but would not like the appearance or thought of them mixed up together.

Let us know how your casserole comes out.

This is the recipe, but will be making it with beef and chicken, and adjusting for me taking into prison, but still making it a go with the same idea........Woman Happy

Slow Cooker Doritos Casserole
Prep Time: 5 minutes
Cook Time: 8 hours, 30 minutes
Total Time: 8 hours, 35 minutes
Yield: Serves about 6
Slow Cooker Doritos Casserole
Ingredients

(1) 28 ounce can Red Enchilada Sauce
1 pound boneless skinless chicken breasts
Then...
1 cup Sour Cream
8 ounces Monterey Jack Cheese (note- half goes in the casserole, half on top)
(1) 11 ounce bag Nacho Cheese Doritos, crushed (save 1/2 cup for topping)
2.5 ounce can olives
Instructions
Add the chicken breasts, and enchilada sauce to your slow cooker.( PLAN TO DO THIS IN PRESSURE COOKER, AND ADD TO SLOW COOKER, AS SLOW COOKER BETTER FOR ME AT WORK, AND WANT THIS MORE OVAL THAN ROUND) Cover, and cook on LOW for 8 hours.
Shred the chicken breasts right in the slow cooker.
Stir in the sour cream and half of the cheese, stir.
Stir in the chips in, reserving a 1/2 cup for the top.
Sprinkle the rest of the cheese on the top, then the olives, then the remaining chips.
Cover, and turn slow cooker to HIGH for 30 minutes.
Serve and enjoy!
