Don't Ask, Don't Tell Cookies
1 cup softened butter
3 cups sugar
4 large eggs, beaten
2 tsp. vanilla
1 cup cocoa powder
1 tsp. baking soda
1 cup buttermilk
5 cups flour, packed
2 cups sauerkraut, drained & rinsed
Beat the softened butter with the sugar until light and fluffy. Add the beaten eggs and mix in thoroughly.
Beat in vanilla, cocoa, baking soda, and baking powder.
Add half the buttermilk and half the flour, beating until smooth; repeat.
Chop the sauerkraut fine and measure out one cup; stir into dough by hand.
Drop dough by heaping teaspoons onto greased cookie sheets.
Bake at 350 for 10-12 minutes; cool on rack for one minute, then transfer to wire rack to cool completely. Frost when completely cooled. Makes about 8 dozen cookies.
Mocha Icing
1/2 cup softened butter
1 cup semi-sweet chocolate chips
4-6 tsp. very strongly brewed coffee
3 - 3 1/2 cups confectioners sugar
Melt the chocolate chips with the coffee and stir until smooth, then stir in the softened butter.
Whisk in the powdered sugar until of spreading consistency.
Frost the cookies; sprinkle on some shredded coconut before the frosting is fully set, if you wish.
