Does his zucchini bread sound correct?

I am not a baker.  Antonella's banana cake is the only baked good I made on a regular basis.  So I'm taking a new route through our local grocery and I find this recipe on the bulletin board.  There was only one copy so I'll ask this question before I write it down.  It had one tablespoon of cinnamon in it.  Is this standard for this recipe?  TBLS?

Yes.  The bread will be very moist because of the zucchini, but the flavor will be more of a cinnamon bread.  

*If you do not want a bold cinnamon flavor, just reduce to whatever you feel comfortable with.

the  recipe calls for  1 tablespoon  cinnamon per 1 1/2 cups of zucchini  per loaf , however I add  allspice and nutmeg in mine.

 

zucchini  bread can  taste very " blah " if enough spice  or lemon poppy  seed  is not used.

 

 let your zucchini sit over night or for  2 hrs  after cutting to drain the extra water  off it before adding  the flour & other ingredients

@depglass  It will certainly be cinnamon forward. My recipe makes two loaves of zucchini bread and calls for 1 teaspoon of cinnamon. I usually do a rounded tsp., but at the most it's a half a tablespoon. It all depends on how much flour, eggs and zucchini are being used. Then, again, I put chocolate chips in mine.

My recipe calls for 1 pound of zucchini, 2 cups flour, 1 tsp cinnamon, 1 tsp allspice, 1 cup sugar, 2 eggs, and 5 tbsp sour cream.

I wouldn't use more than 1 tsp of cinnamon.

I only use 1/2 teaspoon of cinnamon. I don't care for it to overpower the zucchini bread.

Another question.  Am I right in assuming the weight or volume of the zucchini is for grated and drained?  I think it said 2 cups or it could have been 2 pounds.  Now I wish I'd taken the time to copy it right then.  Do you press the liquid out or just grate and drain?

I roll the grated zucchini in a flour sack dish towel and wring the liquid out over the sink, squeezing out as much liquid as you can.  I end up with about 1 1/2 cups of zucchini.

It can be bland without cinnamon, but I wouldn't use a whole Tablespoon. Maybe half a T.

TOP
