These recipes sound so good. I'm trying to think how to make them w/less sugar.

@Foolywooly11   Here are the "Joy" recipes  as promised.

Hope  you enjoy  them.  When I bake the pumpkin bread I  double the recipe to make two loaves since it is so well liked, particularly by my oldest, seven year old, grandson.

                            Quick  Banana Bread

Have all ingredients at about 70 degrees.  Preheat oven to 350.

Sift together:

1 & 1/3 cups sifted all purpose flour

2 & 1/4 tsp. double acting baking powder

1/2 tsp. salt

Blend until creamy:

1/3 cup shortening

2/3 cup sugar

3/4 tsp. grated lemon rind

Beat in:

1  to 2 beaten eggs

1 to 1  & 1/4 cups ripe banana pulp

Add  the sifted ingredients by thirds to the sugar mixture.  Beat the  batter mixture until smooth after each addition.  Fold in:

1/2 cup  broken nutmeats, optional

1/4 cup finely chopped dried apricots, optional

Place the batter in a greased bread  pan [to make a 8 & 1/2 by 4 & 1/2  inch loaf]

Bake about an hour until done.  Cool before slicing.

                                   Quick Pumpkin Bread

Preheat oven to 350 degrees.  Sift together:

1 & 3/4 sifted all  purpose flour

1/4 tsp. double acting baking powder

1 tsp. baking soda

1  tsp. salt

1/2 tsp. cinnamon

1/4 tsp. ground cloves

In a large bowl beat until light and fluffy:

1 & 1/3 cup sugar

1/3 cup  shortening

2 eggs

Add and beat in:

1 cup  cooked or canned pumpkin

Now add the sifted  dried ingredients by thirds alternately  with:

1/3 cup water or milk

1/2 tsp. vanilla, optional

Do not overbeat between each  addition.  Fold in:

1/2 cup  coarsely chopped nuts (I don't add these.)

1/3 cup raisins or chopped dates (I  don't add these.)

Pour batter into a greased 9  by  5 inch loaf pan about 1 hour.  Cool in the  pan for 10 minutes, then turn out onto a rack for further cooling.

Both of these recipes are from the Joy of Cooking,  Irma S. Rombauer and Marion Rombauer Becker, Bobbs-Merril Co., Inc.

1975 edition, Pages 624 to 625.

Yes, I believe those are the smaller loaf pans.   You could probably use 2 of the regular size pans if you don't have the 7 x 3 size.

Bisquick recipe:

1 1/3 cup mashed bananas

3 eggs

2/3 cup sugar

3 tbsp. vegetable oil

2 2/3 cup Bisquick

1/2 tsp. Vanilla

1/4 cup milk

1/2 cup chopped walnuts

Grease loaf pan.  Bake 50 to 60 minutes or until toothpick comes out clean at 350 degrees.  Cool 10 minutes.  Loosen sides and remove.  Let cool before slicing.

Making this for 20 years.  And so did my Mom before me.  My husband loves it.
