Does anyone have a good recipe for banana bread or pumpkin bread?

My dear departed sister made the best pumpkin bread, with walnuts. It was so moist, too. She also made a great banana bread. I guess it's not really the season for it, but I don't care, if I had a recipe, & can find the ingredients. I don't think she used fresh pumpkin. Anyway, any recipes will be greatly appreciated. Thanks!!

@Foolywooly11   I use the recipes for these from The Joy of Cooking book.  I'll look  them up and post them for you when I get a chance later today.

I picked up this Pumpkin Bread recipe from the QVC boards years ago!  It is the only one I will make as it is perfect every time!  It adds OJ and applesauce.  It is a family favorite.  I make it all year long as canned pumpkin is always available.

 

I freeze the second loaf and it freezes great.

 

 

 Pumpkin Spice Bread  **     

WITH OJ, VERY MOIST!!!

 

2 c. sugar

1 c. brown sugar

1/2 c. applesauce

1/2 c. vegetable oil

4 eggs

1 t vanilla

1/2 c. orange juice

1-(16-oz) can solid packed pumpkin

3 1/2 c.flour

1 t baking soda

1/2 t baking powder

1 t salt

1 t cinnamon

1 t nutmeg

1/2 t allspice or ginger

(opt.) 1/2 c each of walnuts and dried cranberries  ***I ADD MINI CHOCOLATE CHIPS

 

Preheat oven 350 and grease two loaf pans

 

Combine flour,baking soda,baking powder,salt,cinnamon,nutmeg,allspice.- set aside.

In mixing bowl mix sugars,applesauce,oil,eggs,& vanilla.                       

Add pumpkin & mix well.

Add dry ingredients & orange juice and walnuts and cranberries if using and mix well BUT do not overmix..

Divide batter into the greased loaf pans.

Bake 50-60 minutes or until toothpick inserted in center comes out clean.  **DO NOT OVERBAKE

Cool 10 minutes in pan then remove from pan to cool.

 

**OPTIONAL:  ADD 1/2 teaspoon of caramel extract  

ALSO CAN BE MADE IN A BUNDT PAN

I made this banana bread recipe yesterday.  It only has 1/3 cup sugar but is plenty sweet from the ripe bananas. 

 

4 bananas, very ripe

1/3 cup butter, melted

1/3 cup sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups all purpose flour

1/4 teaspoon salt

1 teaspoon baking soda

1/2 cup coarsest chopped nuts (optional)

 

Break up two bananas in a bowl with a fork and set aside.

 

In mixing bowl chop up other two bananas, add sugar and mix with a mixer until smooth. Add melted butter, eggs and vanilla and again mix with mixer.  Then mix in flour, salt and soda.  Finally, fold in the two bananas that were set aside and the nuts. Bake at 340 degrees for 1 hour (mine was done after 50 minutes so make sure to check on it early).  Makes one loaf.

Easy Banana Nut Muffins

 

  • 3-4 ripe bananas, mashed
  • 1/3 c butter, melted
  • 3/4 c granulated sugar (I use half white half brown sugar)
  • 1 egg, beaten
  • 1 t vanilla
  • 1 t baking soda
  • 1 t baking powder
  • 1/4 t cinnamon
  • 1/8 t salt
  • 1 1/2 c all-purpose flour
  • 1 c chopped walnuts  
  •  
  • Preheat the oven to 350°.   
  • In a large bowl, combine melted butter & mashed bananas & stir with a large wooden spoon.
  • Stir in the sugar, egg, & vanilla, then sprinkle the baking soda, baking powder, cinnamon, & salt over the banana batter & give it another stir to combine.
  • Add the flour & nuts last & stir just until no streaks of flour remain.
  • Evenly divide the batter among the cups of a lightly greased muffin tin. Sprinkle tops with additonal chopped walnuts if you want or sprinkle with some Turbinado sugar.
  • Bake for 20-24 minutes, until golden brown on top and a toothpick inserted in the middle of one of the muffins comes out clean.
  • My oven takes 22 mins

 

For Banana Bread instead of muffins, just pour all of the batter into a lightly greased loaf pan and bake for 50-55 minutes, or until a sharp knife inserted near the center of the loaf comes out clean.

I baked in 8 x 3 tin pan for 60 mins @ 350°.

This recipe is from Betty Crocker cookbook. Its' the only pumpkin bread recipe we have ever used. It's really good & moist. The original recipe uses shortening.

 

Pumpkin Bread from Betty Crocker Cookbook

 

2/3 c safflower oil

2 2/3 c sugar

4 eggs

1 can pumpkin (1 lb)

2/3 c water

3 1/3 c all purpose flour

2 tsp soda

1 1/2 tsp salt

1/2 tsp baking powder

1 tsp cinnamon

1 tsp cloves

1 c chopped walnuts

 

Heat Oven to 350° Bake 70 mins or until toothpick comes out clean

Grease 2 -  9 x 5 x 3 loaf pans

I put the extra in 2 smaller pans

In large bowl mix oil & sugar, stir in eggs, pumpkin & water

Blend in flour, soda, salt, baking powder, cinnamon & cloves

Stir in nuts

I use Antonella's banana cake recipe, it's better than any bread recipe I've tried.

Do you happen to have her recipe handy?  I tried the search above and got the most ridiculous amount of things to sift through!    I am terrible at 'searching'.

Banana Cake

Ingredients:

1/2 cup butter-flavored shortening
1-1/2 cup sugar
1/2 tsp. salt
4 smashed brown bananas (the riper, the better)
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
2 eggs
1 Tbsp. vanilla
3/4 cup milk

Preparation:

All mixing must be done by hand with a wooden spoon.

Mix all the dry ingredients except flour. Add the eggs, sugar, shortening, vanilla, and milk. Mix thoroughly.

Add the smashed bananas and mix.

Add the flour, continuing to mix.

Grease and flour a 9" x 11" pan. Pour in the batter and bake at 375°F for 25 minutes or until a knife through the center of the cake comes out dry.

Cover with powdered sugar, let cool, and cover again with powdered sugar.

Zhills, thank you for posting the recipe.  I have it written down in my recipe drawer and I'd rather see one directly from her.  I did make one change, though.  Unless you are in good shape with no physical issues, mixing this by hand is downright difficult.  Don't tell Antonella but I use my Kitchen Aid and the results are still top notch.
