If you do, you may already know this tip. When you buy your ginger root, peel and grate the entire root. Place tablespoon measurements of the grated ginger on a parchment lined sheet pan. Put the pan in the freezer and once frozen, place the ginger "mounds" in a zip lock bag and keep in the freezer. When you have a recipe for soups or stir-fries, just take out the pre-measured amount you need!

I always keep my ginger in the freezer, but grate it as needed, I like this method better!Smile
