Easy Red Enchilada Sauce (budget bytes)

It only takes 10 minutes to make this super easy red enchilada sauce that is bursting with flavor. Never buy the canned stuff again!

Total Time10 mins

Servings: 2 cups
Ingredients
  • 2 Tbsp vegetable oil
  • 2 Tbsp all-purpose flour
  • 2 Tbsp chili powder
  • 2 cups water
  • 3 oz. tomato paste
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt or to taste
Instructions
  • Add the vegetable oil, flour, and chili powder to a medium pot. Turn the heat on to medium and whisk the ingredients together. Continue to whisk as the mixture begins to bubble. Whisk and cook the mixture for one minute once it begins bubbling.
  • After one minute, whisk in the water, tomato paste, cumin, garlic powder, and cayenne pepper until smooth. Allow the sauce to come up to a simmer. Once it reaches a simmer it will begin to thicken slightly.
  • Add salt to taste.  The sauce is now ready to use.

[ Edited ]

I also have an enchilada sauce.

3 T vegetable oil
2 T flour
1/4 cup chili powder
1 T cumin
1/2 t dried oregano
2 cups low sodium beef broth
2-1/2 cups tomato sauce
1 clove garlic, minced
Salt to taste

Stir oil, flour, chili powder, cumin and oregano on low heat until bubbly.  Add broth, tomato sauce, garlic and salt.  Simmer on low stirring occasionally for 15 minutes.

Makes approx. 4 cups.

Fajita Seasoning

INGREDIENTS

  • 2 teaspoons smoked paprika
  • 1 teaspoon sugar
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

DIRECTIONS
  1. Place all ingredients into small bowl.1
  2. Mix to combine.2
  3. Transfer to an airtight container.3
  4. A good rule of thumb is to use 1 tablespoon of homemade fajita seasoning per pound of meat or vegetables. Can be used as a dry rub or sprinkle over meat before placing in a skillet or on vegetables before placing on the grill.

Premade spice blends often have sugar.  I still have to read labels, but I've purchased a few things from Flavor God.

Here's a recipe for Keto Ranch Dressing.
