Tis the season Smile Here is something a bit different to do with those pumpkins!!

Dinner In A Pumpkin

1 8-10 pound pumpkin

1 1/2 pounds ground beef

1/2 of an onion...minced

1 clove garlic...minced

1 1/2 teaspoons sugar

1 1/2 teaspoons mixed Italian Herbs

1 1/2 teaspoons salt

1/8 teaspoon pepper

4 cups tomato juice

1 cup rice...uncooked

3 cups cabbage...shredded

1/2 pound fresh green beans...cut up

Wash pumpkin. Cut off top. Scrape out seeds. Preheat oven to 350*. In a large skillet, slightly brown ground beef, then drain. Add onion and garlic. Saute slightly. Drain. Add tomato juice and seaconings. Heat. Mix in uncooked rice. Layer 1/2 of the cabbage, green beans amd meat/rice mixture. Repeat layers and then replace pumpkin lid. B ake 2 1/2 - 3 hours at 350* until pumpkin is soft when pierced with a fork. A salad and cornbread go well with this. This is a fun dish to make this time of year.

I bet my family would like this. I've stuffed acorn squash with a ground beef mixture; it was good!

Thrilled to see this recipe! I had a similar one from an electric company bill about 40-45 years ago and had forgotten about it till I saw this.................we always enjoyed the baked pumpkin dinner so will be trying this soon. Thank you!
