This is a twist on the traditional deviled egg. Some times I make them and leave the bacon out. I have a friend that uses finely chopped deli ham instead of the bacon.
Deviled Egg Balls
8 hard-cooked eggs, finely chopped
1/2 cup chopped bacon (I just use the Hormel in a jar)
1/2 tsp salt
1/ tsp pepper
1/4 tsp prepared mustard
1/4 cup mayonnaise
1 tsp onion, minced
1 cup finely shredded sharp cheese
Mix all together (except for the sharp cheese) until well blended and creamy. Shape into 1 inch balls and roll in shredded cheese. Cover and refrigerate.
This recipe should make about two dozen balls.
