This isn't really a recipe...just the way I like to eat oatmeal.
Oatmeal with Apples and Walnuts
I start the oatmeal in a saucepan according to the directions on the container. I like old Fashioned Quaker oats or steel cut oats and I use half water- half milk and a pinch of salt. In a small skillet, I add about 1 cup diced apples, 1-2 tablespoons of butter, about 2-3 tablespoons of brown sugar, cinnamon to taste, a handful or two of walnuts and a pinch of salt....add more or less depending on how many will be eating it. Cook apple mixture over medium heat for about 5-10 minutes. I like them to stay somewhat firm...definitely not mushy. I stir in about a tablespoon of flax seed meal to the oats at the end of cooking for added nutrition. The apples are sweetened enough that no sugar is needed for the oats. Serve in a bowl with apple and walnuts spooned on top.
