Delicious Cauliflower Au Gratin

 

Cauliflower Au Gratin 

cups cut up cauliflower

4 teaspoons butter or margarine

2 cloves of garlic minced (or) use the jar kind of minced garlic 

2 tablespoons of all purpose flour

1/2 teaspoon salt

Dash of cayenne pepper -optional 

2 cups evaporated skim milk

4 ounces (1 cup) shredded low-fat sharp cheddar cheese

1 cup frozen whole kernel corn cooked and drained (optional)

2 tablespoon chopped parsley 

 

Preheat oven to 350 degrees

In microwave or steamer, cook the cauliflower until tender. Drain any liquid off when done. Set aside.

In a deep saucepan melt butter and add garlic. Lightly sauté 1 minute. Stir in flour, salt, and cayenne pepper.

Gradually add milk and stir constantly until sauce boils and thickens.

Stir in 3/4 of the cheese,all of the corn and parsley.

Arrange cauliflower in a shallow baking dish. Cover with sauce and sprinkle remaining cheese on top.

Bake until top is golden brown and bubbling, about 30 minutes. 

This makes 4 servings. Calorie count not listed.

I make mine without the corn and cayenne pepper. I also use a little extra cheese on top. I eat this as it is delicious and not just low calorie. One of my favorite recipes . I made mine today in my new Breville Smart Oven Pro. Love this oven.

Looks good, I will try it this weekend.  I bought an enormous head of cauliflower a few days ago and I need to use it up.  Thanks for the recipe.
