@PA Mom-mom

I was just gifted 2 Delicata & 1 Kabocha! Can’t wait to cook.

Truth be told..I’m kinda spooked with the cutting since

they are tough skinned. I was told to put them in the microwave

for a couple minutes to softened the skin...can’t wait to try!

Delicata squash is my fams fav!! I roast it with butter and brown sugar and a touch of cream sherry----OMG----so amazing!!!

@sidsmom.  I had no problem cutting mine. It was nothing like cutting a butternut or acorn. Mine wasn’t real long,maybe 7-8 inches and not real fat. After cutting in half lengthwise, I sliced each half into half inch strips. Skin was very tender, no need to peel.

@sidsmom I also don't have a problem cutting this squash. I wouldn't bother with the microwave. Just slice off the ends and slice down the middle and scoop out the seeds. You can cut your crescents thick or thin depending on how long you are going to bake. They can overcook fairly easily. That's why I like to cut them a little thicker, so that the shell gets tender while keeping the flesh firm.

I think Martha Stewart has a good recipe.  She cuts it (lengthwise) into wedges, tosses them with hot red pepper jelly, olive oil, garlic, salt and pepper and roasts them.

@rrpell Yes, I just used these in a Martha Stewart recipe last week. It called for a different kind of squash, but I used Delicata. It was a sheet pan recipe with mild Italian sausage, cabbage wedges and squash, with onion and rosemary. Soooo good!

I went to Harris-Teeter grocery store today and found these squash.  They are so cute.  I bought 3 of them and a golden acorn squash.  I haven't seen them at the store before, but so glad I found them today.  I will be trying them tomorrow or over the weekend...  So glad I found something new to try on the recipe board..
