Re: DO YOU MAKE ANY "FUN" VEGETABLE SNACKS?

I like veggies but am unlikely to be as adventurous as you - unfortunately!  I often see "veggie straws" in the snack food aisle and am tempted, but have read they aren't actually healthy.

I like to improvise when it comes to more ways to eat more vegetables and healthy snacks is one of them.

Last year I made a few batches of Kale Chips .... fun, tasty and cheap.   They weren't what I'd call "fabulous", but they were good.

I recently came across a recipe suggestion using paper thin slices of zucchini, adding oil and grated parmesan, thn baking to make them into wanna-be potato chips.

I haven't tried the zucchini recipe, but thought I'd ask ....  do you have any recipes for "fun" vegetable snacks?

Please share ... TIA  Woman Happy

I do like cooking super-thin zucchini rounds in evoo until they have a little crisp to them and serving with tzatziki. My homemade versions of tzatziki have never wowed me so I prefer Cedar's.

For a more elaborate (but fairly easy) endeavor I'll make a zuchini tart with store-bought puff pastry and pesto or Boursin cheese.

One of my favorite snacks is celery stuffed with Peanut butter - sometimes JIF sometimes the lowfat powder that is mixed with water. . . OR celery suffed with cream cheese and chopped green olives or topped with everything bagel. I also love to roast almonds, walnuts and/or pecans with a olive or avocado oil and the Chex Mix recipe: Worcestershire sauce, seasoned salt, garlic and onion powder with a touch of cayenne. Mix together, put it on a cookie sheet and slow roast at 250 of an hour or a bit longer, stirring it every 15 minutes. I sometimes add pumpkin or sunflower seeds for the last 15 minutes.

Sorry, I know it isn't a veggie recipe......

What is this?  I've seen it mentioned before on here ... somewhere.

BTW ......  if you haven't already tried them, check out Sweet Potato French Fries.  I will never buy white potato fries ever again.

Raw is also good.  If they are already cut up, you can just grab some.

Long ago I sometimes kept the little grands busy, when we were waiting, by peeling each little leaf off a Brussels sprout.  Dip works.

We do like celery stuffed with peanut butter. I always said "no way" until I tried it. Now it's a part of any snack tray I make for us.

Well, you have to admit, it does sound a little weird.  lol  Woman LOL

I've used PB, cream cheese, and even egg or tuna salad for stuffing celery stalks (after peeling the strings off).   A mini high protein snack with lots of fiber, and that satisfying crunch that some of us crave.  What's not to like?

@Tinkrbl44 "Everything bagel" is a seasoning. It is what is on top...of an everything bagel. Smiley Happy

When I make vege pizza using crescent roll sheet as the crust, I bake the crescent roll first so you have a big rectangle. Cool it in fridge. My sauce is cram cheese mixed with ranch dressing. That gets spread out iver the crust. It will not be runny like tomato sauce. I top that with tiny broccoli florets that have been steamed in a double boiler so they are bright green. Then I add tiny cubed english cucumbers and tiny cubed romano tomatoes. I the add thinly grated mozzarella (or thin Italian mix cheese-I buy Sargento). Sometimes I will add grated carrots and sliced black olives. I cut it into squares using a pizza cutter. It is a great appetizer at a party or a meal. It always goes. People really like it.
